New to eating fish - any ideas?

I was brought up vegetarian but for various reasons - health and to fit in with my family's diet which is complicated by my son's food allergies,- I am now looking to eat fish/seafood. But as I was brought up vegetarian, I am a bit clueless on how to cook it and what to choose. Grateful for any ideas!

The key to cooking fish is not to overcook it. It usually only takes a few minutes in a frying pan or under the grill. Or you can wrap it loosely in foil and bake in a hot oven for 15-20 minutes. I do salmon fillets that way, lightly seasoned with jerk or cajun spice, with a good squeeze of lemon juice as I serve up.

Fillets are probably best for you to start with.

We eat quite a bit of pre-cooked salmon and mackerel fillets because they’re not too pricey, and lots of tinned tuna and sometimes tinned mackerel. I also regularly buy frozen seafood mix for things like fish pie, paella, lasagne and risotto, and also frozen white fish fillets because they’re normally quite good value.

BBC good food have lots of tasty and easy to cook fish recipes. We had fish curry tonight. Really easy to make.

what ingredients do you have to avoid. Might be easier to suggest things then.

We need to avoid eggs, dairy, most nuts and celery - so cooking vegetarian food for all of us has been quite tricky.

Beige stuff and premade flavoured fish (cod with xxx xxx, etc) is probably a good start for you, as it's all very unthreatening and easy to cook as it has instructions on it.

I feel sorry for you OP, but I do understand as a dgc has many allergies including all dairy and soya and some seafood. It is an absolute nightmare to feed him

Overcooked fish goes a bit tough and chewy. You want it to get just to the stage of flaking easily and becoming opaque. It's not tricky, really.

You could try sushi, which you can buy ready prepared from supermarkets or get delivered as a takeaway. Very tasty. Needs to be eaten very fresh as the fish is raw.

I love vegetarian sushi so would like to do this but am slightly nervous given the food allergies - perhaps I could make sushi

It is a huge arse. He likes seafood and fish and I am keen to encourage it because it's a relatively safe choice for his combination of allergies

Can you have coconut milk? if so then you could try the curry.

smoked fish with mash potatoes and peas?
poach the fish in a little water and cover with foil.
the fish is cooked through when it is not translucent / pink. Overcooked fish has quite a rubbery texture.

Tinned salmon and pasta is a favourite in this house. Cook pasta as you usually would and drain, add in as much tinned salmon as you need and any veg lying around peppers and mushrooms go well. . We use garlic Italian spice and pepper to season.

Get some frozen fish fillets. Put on foil on a baking tray, and put some tinned tomatoes and raw chopped red onion on top. Fold the foil over the top. Give it 25 ish in oven. Easy and cheap.

A lot of juice will come out so a baking tray with edges is best.

I haven't done this for ages (didn't have fridge or freezer for nearly a year), so can't remember how you know it's cooked. If you cook it for way too long (I always do), above-mentioned tray will be a bugger to wash up as juice will dry on.

Try making fishcakes, you can play around with different fish and flavour with herbs and spices to your taste. An easy place to start would be tuna fishcakes using tinned tuna. I also add finely chopped red onion, red pepper, chilli and coriander with a squeeze of lime, they're really tasty.

Simple cod fillets dusted with Cajun spice mix and cooked in a griddle pan is also very good and makes a quick and easy meal.
