Easy dessert/pudding recipe

I'm not too bad a cook and can make some decent cakes, but really struggle when it comes to desserts, which is annoying because it's the best part of any meal!

Does anyone have any really simple recipes for a dessert that could follow either a summer barbecue or a roast dinner.

Will usually end up with a shop bought cheesecake, but they're pretty pretty appalling.

Eton mess is always my go to when we’re entertaining. Whip some cream, slice up the strawberries and crush some shop bought meringues (or home made if you prefer). So simple.

Lemon posset, only need cream, sugar and lemons and there are loads of recipes online, takes about five mins to make!

American "Ice-box cake" is pretty easy and surprisingly nice.

You layer digestive biscuits with whipped, slightly sweetened, little vanilla cream, and add fruit. I've done it with strawberries and tinned peaches, also did a custard layer with the peaches.

Make it the evening before, leave in the fridge, and the biscuits soften and turn cake like, which also thickens the cream etc, so easily serves up as well.

If you google icebox cakes, there are various versions, but it can be as simple as I said above.

Massive unintentionally drip feed here husband doesn't like whipped cream (he's fussy not intolerant)

Maybe this is the source of my woes.

You could use coconut cream instead?

Chocolate brownie with pouring cream and a few raspberries, mint sprig for garnish?

Banoffe pie, again could use coconut cream

I buy those pre-baked pastry cases because they are so versatile and quick to whip up a delicious dessert. All of the following use the tart base, so its just the filling you need to make:

  • chocolate tart served with some fresh berries
  • Lemon tart
  • Lemon/passionfruit tart
  • Treacle tart
  • Pecan pie

I make epic brownies so i could do that with some ice cream

I have magi mix i ice cream maker so I'm able to start off and see what disaster I can make this time.
I have used it only once unsuccessfully of course and created what can only be described as chilled custard soup. And then, was the time of the infamous Nigella gin and tonic jelly, which, despite five leaves of gelatin collapsed, an uncompromising heap.

Get meringue nests. Fill with blueberries, strawberries and rasps -serve with vanilla ice cream and cream for those who like it.

You can't go wrong with Banoffee pie. Follow the recipe on the tin of Carnation caramel! So delicious, a hit every time.

Have a look at Mary Berry’s white chocolate cheesecake with raspberries. I made it recently using frozen cherries - added a little cornflour to make a kind of compote for the topping. Previously my cheesecakes have not been very successful but this recipe seems to have the tight proportions of cream cheese, chocolate and cream ( not whipped!)

Mary Berry is my go to chef for deserts!

I love a simple egg custard made in the microwave. Beaten eggs, spoon of sugar, vanilla extract and full fat milk. Warm milk, add to beaten eggs, sugar and vanilla.
Sieve over cooking bowl. Microwave 4 mins full power, stir well, then cook for another 4minutes or so on medium. Stir gently to begin with to distribute heat. Then leave to stand and set. Manna from heaven. Pour sugar on top and grill or use chefs blow torch to make creme brulee.
chocolate and Baileys mousse - separate eggs. Melt chocolate, mix in egg yolks. Whisk egg whites until stiff, fold into chocolate. Pour into wine glasses or dishes of choice. Allow to set before pouring spoon of choc/coffee liquer over and a swirl of cream on top

Chilled berries (strawberries, raspberries, blueberries etc) with cream with white chocolate slowly melted into it in a pan. Or with homemade chocolate mousse! Could do white choc..

I can do crumble but i was thinking a bit more fancy and summery.

Have a few ideas from this thread so will have a look at recipes! And explore my own cookbooks!
