Quick and easy veggie meals when you hate chickpeas/kidney beans

Hi, does anyone have any quick and easy veggie recipes without chickpeas & kidney beans please?
Gluten free is an additional hurdle but I’m able to adapt most things. I’m just stuck in a rut or find that things take longer to prep than to cook.
I live in a house of meat eaters and making something separate just for one is getting tiresome.
I batch cook lasagne, curry, spinach & ricotta pasta bake, I have a cottage pie I do regularly, a veg casserole with dumplings and a meal with Quorn pieces & leeks in a sauce that I do but don’t want to be eating Quorn too often.

I’ve just got the green roasting tin but it’s quite underwhelming tbh. Some meals don’t seem to have protein in and/or need me to spend 40 mins chopping before I even get anything in the oven. I have arthritis so that is impossible for me.
Any suggestion welcome.

Buckwheat/bulgar wheat with roasted veg... can also be eaten cold too
Jacket sweet potato with topping
Sweet potato wedges with homemade salsa
Cauliflower rice with mushroom ragout

The other day I was using up ingredients and literally fried onion garlic cabbage mushroom and red pepper added soya sauce and ate with rice - delicious and didn't take long at all

Stilton (assume vegetarian?) melted with a splash of cream and stirred into gnocchi takes minutes.

I had a lovely diner tonight

160g orzo in a baking dish
Pour over 380ml stock
Mix a sliced leek, bunch of asparagus halved, and lemon zest in olive oil.
Scatter over the orzo stock. Scatter over hazelnuts
Bake for 20min and stir in rocket and lemon juice

My mouth is watering at some of these, even though I’ve brushed my teeth and I am sat in bed!

I love a paella type dinner

Whatever veg you like, I use mushrooms, peppers, red onions, green beans, garlic, chopped up fairly thickly and fry on pan, add a couple of tomatoes when rest are fried off, then add veg stock (I use 3 stock pots and a litre of water and keep topping up. Add parsley thyme salt pepper paprika and turmeric. (Saffron if you have it) and then throw in your rice to cook away in it, adding water as needed until rice is cooked how you like it. I use 2 boil in the bag portions (that's all we buy) I just pour out the uncooked portions into the stock.

It's delicious. Then I add mozzarella when I'm serving as I love.cheese. not strictly paella then but never the less delish

My favourite go-to recipe for vegetarians is bulgar wheat with rich tomato and black olive sauce, and grated parmesan.

Takes 5 mins to prep, then simmer it gently until it thickens.

My dh has a disability and has an electric mini chopper- it's great and I confess I use it too!

If you like cooking, have you looked at Ottolenghi's vegetarian recipes?

I always enjoy any sort of rice dish - jollof or just adding peppers, onions, peas etc.

I love a good stir fry with plenty of crunchy bean sprouts and fresh veg (add garlic, ginger, chilli to taste) don't by the ready made packs, they're rubbish!

Assuming you can do gluten free pasta, some of my favourite veggie dishes are pasta sauces, often topped with cheese for some protein. So spinach and ricotta or tomato and aubergine are two particular favourites. At this time of year when courgettes are plentiful we often do fried courgettes with chilli, lemon and garlic and served on spaghetti with feta cheese.

Risotto is also a great one for vegetarians. A friend does paella to which she adds cannellini beans and I think if I went veggie I'd probably add some of those to a veggie risotto - a lovely pea risotto with some cannellini beans would be delicious I think.

I do roasted vegetables for lunch a lot - served on couscous for me but assume you'd find a gluten free version.

Do you hate ALL chickpeas, or just when they are the main part of the dish? I ask because roasted carrots or cauliflower on a rice/bulger wheat/couscous/lentil base with a few chickpeas stirred in is a favourite of mine. With a honey/mustard/lemon dressing.

If I went veggie I'd also eat a LOT more aubergine - lots of great recipes out there for grilled/roasted aubergine with some variation of miso-based sauces which are all delicious.

We do fajitas with halloumi as the protein relatively often.

Aubergine, mushroom and goats cheese burgers - slices of aubergine and mushroom that are chargrilled. You need two aubergine and two mushroom per burger, with some goats cheese drizzled with honey and fresh thyme in the middle. Amazing. You could do them as stacks without the bread for gluten free and serve with new potatoes.

I love summer rolls. I've not veggie, but I actually prefer them vegan. They are also GF! There are lots of youtube videos on how to roll them, and you could add prawn/chicken etc for the rest of the family easily. I don't add Thai basil to mine though, nor do I use this dipping sauce. They look tricky, but aren't and can be made ahead, and stored in the fridge covered in clingfilm.

I serve with my simple satay sauce. In a jar, mix about 2-3T crunchy peanut butter, add about 1T sesame oil, 1T sweet chilli sauce, 1 teaspoon soy sauce (check its GF) and shake. Add a little water, shake and keep doing so until its the consistency of thin honey.

Do you eat gram flour (chickpea flour?). I like use this instead of wheat flour to make fritters- sweet corn, onion, grated courgettes or just about any veg. Again- a meat could be added for the rest of the family.

Meera Sodha has a lovely vegetarian cookbook. I'm cooking her Roasted paneer aloo gobi (tomato, paneer, cauliflower and potato) curry this weekend which is delicious.

Try millet/quinoa and roasted veg. Millet requires the right amount of water. Cook with the lid on, find a good guide. You don't want it too wet. Get the hang of it it, and get it right and you've got the most nutritious grain, it's can almost be creamy. I was looking for wheat free cornmeal tortillas, but they seem to be mis-advertised and usually have wheat in. Otherwise I'd suggest that for speed with your favourite bean.

Ottolenghi vegetable paella
Risotto - mushroom or baked tomato (see hello fresh recipe)
Sweet potato falafel
Lentil and mushroom meatballs with gf pasta and tomato sauce
gf spaghetti with Quorn Bolognese, or asparagus and goats cheese
Pea and paneer curry
lentil shepherds pie if yours is different
vegetable and tofu stirfry with rice or rice noodles.
Frittata and new potatoes
mushroom and halloumi burgers – gluten-free buns or lettuce (chips on side)
tacos with veg and refried beans or black beans - old El Paso type ones which are gluten-free or buy masa and make your own (very easy)
quinoa chilli with black beans and sweet corn
Vegetable and egg fried rice
Thai green curry with tofu or Quorn (just check paste is veggie)
pan fried gnocchi, with pesto and tomato sauce and mozzarella
Shakshuka
Tagine served with gluten-free, couscous or rice

Tonight we had pasta ( you can do gluten free) cooked in vegetable bouillon.

Sauce cooked separately was:
Onion and garlic fried gently in oil ( olive oil or rapeseed oil), with added chopped cherry tomatoes, mushrooms and courgette, shredded carrot. Smoked paprika. Add a little of the stock from the pasta, add a handful of spinach, cook for a couple of minutes. Drain and add the pasta.

Good with a salad and/or garlic bread.
I add Merchant chestnuts if I have them.
