I think it says eat within three days of opening, but we never do. A week or two more like.

Mine is usally longer than that. I have a cheese box so once it is opened it goes in there and I don't make a note of when it is opened. I throw it if it goes mouldy or smells bad.

yes, unless it's vacuum packed how would it 'know' if it was open or not?

I do stick to the use withing 3 days of opening for meat and other dairy products but not cheese. It is designed to be kept for months, isn't it. It is already months old by the time it gets to us!

I only throw it out if it too mouldy or it has dried out.

I went to Cheddar last weekend and saw cheese-making in the flesh. Cheese matures for months and months before it is sold. It is stored in a rind to prevent it from going mouldy but the very nice cheesemaker who we chatted to said if you kept it airtight (ie wrapped in clingfilm/airtight container) it would last for ages.

I'm no microbiologist or food expert but I buy enormaous blocks of cheese and it sits in a tupperware in the fridge for ages.

I would say yes it would get eaten within 3 days, but then i live with a family of mice . I seem to buy a large packet of chees each week. I worked it out once and i seem to spend about £25 a month on just cheese.
