Baking and freezing

It’s DD‘s birthday in a few weeks.

We will have a party on the Sunday night (need a cake). On Monday she needs 6 cupcakes/cookies etc for playgroup. And on Tuesday she needs 15 cupcakes/cookies for day care.

Trouble is, I‘m working flat out the previous weekend plus Monday night. I‘ll only have time to bake the Thursday before, and that’s pushing it.

Is it possible to bake something now and freeze them for a few weeks?

I think I need to outsource her birthday cake. I‘ve made them for all my children but this year I really won’t have the time 😔 Or could I freeze the sponge and throw some icing on it before her party?

I always make the sponge birthday cakes in advance, then ice them when still cool, helps it set quicker, especially important for the June birthday cake.

I wrap them well in clingfilm, a couple of layers in different directions to make sure no gaps for air to get in.

You can freeze all those things ahead, I only do one layer of cling film as many types are porous and then pop it into a freezer bag to seal out air or you can use a container too if you have iced them before freezing and don't want to damage icing.
