It's just going to taste like onions in wine. You could mix half wine and half vinegar, that would work quite well.

Wine isn't acidic enough to pickle anything. You need at least 5% acetic acid to stop microorganisms developing. Vinegar has this so that's why you use it.

Eat the onions and drink the wine!

Wine won't preserve the onions, not acidic enough.

So for a tapas dish that you want to keep for up to a week , fine.
Some thing you want to preserve longer , no.

Onions in over proof vodka might work but not wine, not enough alcohol.

Are you wanting to pickle them to store them or just to eat soon, because onions in wine are tasty if you aren't planning on making a preserve

Both alcohol and vinegar are preservatives, but have very different tastes on the end result if that makes sense.

Pickling is only done with vinegar.

It will be a bit like red wine gravy I imagine. It won’t be pickled so much as wet.

Onions in wine could be good but not for a preserve.

You need a high enough level of acidity to preserve onions ( at least 6% is best)
also you cover the onions with salt or brine overnight to draw out excess water, so as not to dilute the vinegar.

You can do onions in wine. They will be tasty but will only keep for a week ot two in the fridge.

No doubt there is a culture that packs wine, salt and onions together as a preserve. Look for the recipe.

Red wine would flavour them, but probably not enough alcohol via vol to preserve.

In actual fact if you do use wine, you may end up with a vinegar due to bacteria 😄
