Anyone have a healthy lasagna recipe

If possible using lamb or beef mince.

I think the whole point of lasagne is that it’s not healthy. It’s one of those things that I’d rather have half the full fat version than a low calorie one eg made with leeks instead of pasta. Sorry op! 😬

If I'm making a healthier lasagne, I use a lot of veggies in the Bolognese sauce (often including some lentils) and then, rather than a white sauce, I just use light creme fraiche, thinned with a bit of milk and flavoured with a pinch of nutmeg and then I add some cheese on top. I think it was a Jamie Oliver recipe originally. I don't like a massively creamy lasagne so it works well for me.

No. Once you have removed the pasta, bechamel, parmesan and mozarella it isn't a lasagne anymore.

Spent sometime googling 'healthy lasagne' last weekend before realising I was kidding myself.

I make a lighter one in the summer with spinach, artichoke hearts, pine nuts, goats cheese and pesto but I suspect that's not really what you're looking for. 😂

Tbh I'm sure it tastes lovely but all those things together might not work for me.

on the contrary to a pp I was about to say all lasagne is healthy.

it seems like it’s full of good things to me, meat, garlic, tomato, herbs, onions, milk, flour, lots of cheese, oils. Delicious and all healthy? I mean probably not a low calorie meal if you eat a slab of it with garlic bread, slather it in piles of salt or drink it with an entire bottle of red wine but a nicely sized piece with something balancing like a salad or green vegetable would definitely be on my list of healthy things? Especially with all the care and effort that goes into making it.

The Hairy Bikers have a Skinny Lasagne recipe which uses unrolled leeks instead of lasagne sheets. I’ve made it once or twice and it’s not bad but blanching the leeks is a bit of a faff.

Simon Rimmer's mum's lasagne. It replaces the white sauce with cottage cheese ( I use a ff natural) I do not use the oil and I only use a teeny bit of cheese. I serve it with a salad.

I was thinking the same- since when has lasagne been unhealthy! 😂

It’s certainly not a low calorie dish, but if made from scratch it’s a nutritious meal.

It can be served with a lovely fresh salad, and as pp’s have said you can include extra vegetables with the base sauce.
