Looking for healthy breakfast ideas that are super quick and not based on oats or yoghurt.

Dukan pancakes
Boiled eggs with tomato, cucumber, olives and half a flatbread
Cottage cheese or skyr or avocado or smoked salmon pr mackerel on rye bread
Omelette /mini premises frittata with veggies inside
Green smoothie (spinach, avocado, etc)
Chewy oats bars (like a homemade Porridge bar)
Baked beans with mushrooms on top (could cook mushrooms in advance and heat in microwave in the morning)

Or think asian: veg or egg curry, or a ramen (or broth + egg, seaweed and kimchi without the noodles/rice).

Egg fried rice. Light on rice, heavy on veg and protein.
If you have cooked stuff in the fridge and some frozen stir fry veg, it is quick.

@Imtoooldforallthis it is delicious and not fattening. Comes in about 350 Cals with 2 crumpets - also makes your kitchen smell like Xmas!!

Banana pancakes.

Need one egg for each banana, flour if choice and raising agent if its not SR flour.

Mash bananas, add egg and enough flour to make a batter - it's an American style thick pancake. I usually do 2 bananas/eggs worth and make into 4 pancakes which does me 2 days. I usually make all 4 at once, eat 2 fresh and put the other 2 asksde for the next day. I reheat in a dry frying pan. Serve with some stewed fruit.

Make it one evening an it will last up to four days in the fridge.
Pack in as many veg as you can, add cheese, salmon, bacon or whatever you have.
Don't use red onions they have a habit of going blue and looking unappetising.

In the morning it is just grab and go.

@Pancakebatter the biggest tip is to have a cast iron frying pan.

Basically sauté lots of vegetables: onion, celery, pepper, courgette etc add some salmon or other protein and get it all warm and half cooked. In a bowl 3 or 4 eggs, use half an egg shell to measure the milk (two times a half egg shell,) salt pepper, fresh herbs, a small carrot grated, some cubed cheeses, mix well. Tip the runny stuff in the frying pan and give it a bit of a prod and jiggle to get the egg through to the bottom, do not stir.

Cook on a lowish heat for about 6 mins until you have the odd bubble. Put under the grill for 4 mins (until the top is set and a bit brown), back onto a ring for another min or two, it should shrink away from the edges a tiny bit. Timings will really vary depending on your cooker. Leave to stand on a cold ring for at least 5 mins.

I like mine to be a lot of stuff only just held together with the egg mix.

I do frittata in silicone mould trays, so they come out like little cake bars. Any veg - onion, tomato, courgette etc, plus ham, tuna, chouriço etc, beaten eggs and grated cheese. They freeze really well too so can just take them out the night before.

@Costacoffeeplease I was just thinking "Oh, I never put a frittata in the oven" and the remembered I make the same mix, put it in a hot water crust shell and call it quiche.

Interesting thing is a frittata serves 3 and a quiche serves six but has a side salad ( because in my brain quiche is for lunch or dinner).

I have an egg, smoked salmon, handful of cherry tomatoes. The protein keeps me going til lunch and it's less than 300 calories.
