BBQs and salads are easy, weather dependent. if there's an oven in the accommodation, I'd do marinaded chicken - marinade thighs and drumsticks the night before/the morning/five minutes before, then put in a large dish in the oven and cover with a lid or tinfoil and cook on 170 for about 40 minutes. Then when you're ready, stick on BBQ to finish cooking and get nice and browned.
If the weather isn't nice, do it entirely in the oven - if you use the oven at 170 or 150 fan, it doesn't matter if you don't know the oven well - I'd do it uncovered for around 40 minutes, turn, then another 20 minutes.
If weather isn't great, and you want to cook on the stove top, spaghetti bolognaise or meatballs isn't fancy but it does the job and usually goes down well and is relatively easy to make.
Or, for something lighter, roast a huge roasting tray of tomatoes with some olive oil, balsamic vinegar, garlic (and any herbs you might have lying around) then serve on pasta with pesto, avocado and feta or goats cheese.
