How can I replicate this fairy cakes?!

How did I make these cakes so yummy??

m I typically do dairy cakes the traditional Victoria sponge way. But these came out like this, so so so spongy and light, yet crunchy on top. They rose quite high and Had some bubble type texture also. I’ve tried to recreate and nothings come out the same!

any tips and suggestions gratefully received

Looks like oven was very hot, what temp? Maybe you used higher than usual

It’s possible. Thinking about it, I might have put them in before the oven hit max temp and turned it up too high. Thank you

The sugar didn’t melt and rose with the heat.

I once put the sugar in twice as I had been distracted by a phone call. I was making my 5 year olds birthday cake. It sort of erupted like a volcano. I called it a volcano cake and poured lots of orange icing into the top of it and let it all run down. It tasted terrible but my son loved it. He asked for a volcano cake quite often after but I told him I had lost the recipe so couldn't make it again.
