Steak........any tips for marinading?

My eldest and I love a good steak so made some tonight but they were a bit bland. I did them on my George foreman. Any tips on making them tasty without over doing it?

Mmm I love marinating meat With beef, the first thing to do is pick your acid. The acid base of a marinade starts to break down the collagen before cooking, so it's more tender and allows the flavors you've put in the marinade to penetrate the meat. The usual choices I use are vinegars, strong wine (almost always red) or lemon/lime juice. Also, you need a goodly amount of salt; it helps tenderize and makes for a good char. Most of it will stay in the marinade when you take the meat out. I usually do red meat with something like this:

1/2 cup balsamic vinegar
1/4 olive oil
1/4 cup red wine
1 tablespoon kosher salt (it won't dissolve as fast as table salt)
black pepper
fresh or dried rosemary, basil, whatever herb strikes your fancy.

This is a bit of a strong marinade and your finished steak will definetely taste of it. If you want something lighter, try a bit of olive oil, fresh squeezed lime juice with a bit of zest, and some salt and pepper.

I usually try to marinate overnight, but a couple hours is really good enough.
