Help me find a recipe - "Savoury Pudding"

An Ex MIL of mine (NC for years) used to make the most incredible addition to Sunday Roast.

She only ever described it as "Savoury Pudding". She picked up the recipe when working with school dinner ladies years and years ago.

It was moist but absolutely not stuffing, it had the consistency of a light cake (it was well risen in a baking dish and served in squares) and tasted well..Savoury. I think it had thyme and perhaps sage in. It was honestly divine and I can't find anything that remotely resembles it online under that description. I have seen savoury bread and butter pudding but it isn't that either. I can only imagine it has another name but I cannot find one.

Help me, please. I've been craving it with gravy for way too long!

I remember this! Though for the life of me I don't where from...I immediately thought "that's made of breadcrumbs". Maybe it's this traditional-yorkshire-recipes.info/yorkshire-savoury-pudding/

@Rosylarose amazing thankyou! So I have already attempted the breadcrumb version and it wasn't it. So that when I realised it's not breadcrumb based. I will absolutely try the second one you sent through.

When I was pregnant I craved it so much I wanted to reach out to her for the recipe and had to stop myself more than once 🙈

My Granny used to make this, she called it Devonshire pud-no one else I know has heard of it! I absolutely love it so make it often with roasts particularly lamb.

This is the recipe I use which is easily doubled. It's not written down anywhere-Granny passed to dm who passed it to me

4tbsp sr flour
2tbsp veg suet
Mixed herbs
Salt & pepper
Water to bind

Cook for about 25 minutes until top crispy - about 210 with the roast potatoes.

@CovertImage thanks for sending that through, I did initially see this and didn't look at it due to the 'cheese' but you may well be right, it is definitely similar and I might be able to make a 'herby' version.

I will genuinely try every recipe until I find it

My Nana, in Sussex, used to serve a suet pudding, cooked under the roast, with lamb or maybe mutton. I don't think it qualified as delicious though, as her daughter did not serve it to us.

It sounds like something Mrs Beeton or Eliza Acton would make, or perhaps a war time recipe which had found its way into the school kitchens.

Google "Onion Pudding" as a couple of possible recipes come up.

It's probably based on home made beef suet, giving it as you say a "savoury taste", and like Yorkshire Pudding, designed to fill diners up to reduce the amount of meat needed.

@Summerhillsquare I have just googled it, it isn't leek pudding. Leek pudding is right upy alley though, I've never seen it where I am, that's been added to my autumn to do list!

@Marsyas I guess you could describe it as a dumpling taste that's been in a vegetable stew. It's the texture that has me complexed it's definitely lighter but so, so similar to a dumpling.

@Treaclemine I grew up in Sussex and have never met anyone else who's heard of this! This version was cooked on its own in its own dish and never had roasted meat juices on it. I guess it could be the same thing but prepared and cooked differently 🤔

@AdaColeman I think you're definitely right about it being a wartime dish. In one of the recipes from PP one was handed down from WW2. I've had a little look at onion pudding - it's absolutely similar in appearance. I made an onion pudding once in the hopes that was it, but it wasn't. Perhaps with some tweaking I could keep trying. I will 100% let you know if I find the treasured recipe.

Where the recipe for Savoury Pudding starts "handed down in my family since World War 2, savoury pudding also known as Gravy Cake".

I've had a quick look at the recipe and it mentions herbs, and it's baked in a cake tin.

Just an update -

I made this one @Rosylarose www.kitchenstories.com/en/recipes/savoury-pudding-e2db and it was delicious, so, so close to what I have dreamed about. Definitely needs lashings of gravy but I had with minted lamb and is almost like a huge moist yet dumpling you can slice with a crusted shell. Everyone loved it.

@Floralovesflowers with your measurements how many people would that serve? I have bought some veg suet and I will make this at the weekend. I'd only be making for 2 so does it just go in a dish?

The measurements I gave would serve about people. For 2 of you I'd do 3tbsp of everything and yes just put in a well greased dish and cook for about 30 minutes. If it starts to get too crispy I put foil over the top.

I'm in Sussex too, although my mum wasn't from here.

As soon as I read your description I thought it was suet based. I can almost taste it!

Sadly my mum died a few years ago so I can't ask her about it.
