Meal ideas using two rings in a campervan

Our old campervan van had an oven and grill, we've now got a smaller van with just two gas rings as the sole cooking medium. Looking for some ideas please, that aren't spag bol, curry and rice, and don't take too long to cook.

We have the camping cookbook by Annie bell and it’s really great! Looks cheap on eBay. Also look up vanfamtribe on Instagram

Get a steamer then you can boil tatties on one ring and steam veggies above them.. that leaves your other ring for sausages, pork chops, chicken etc.

Also lots of pasta dishes such as carbonara etc would work and rissoto.

Chilli and rice
Pasta/ravioli with sauce (endless recipes online)
Risotto
Tacos/fajitas/quesadillas
Fried rice with loads of veg and chicken or prawns
Fishcakes
Soup & crusty bread
Hearty salads (not cooking required unless you wanted a meat with it)
Charcuterie board (or just a baguette with a couple of cheeses would suit me fine!)

‘Quesadilla’: sandwich tortilla wraps together with whatever filling you like and dry fry on both sides. Cut in quarters.

Fillings:
Cheese and tinned sweetcorn.
with tuna.
A tin or pouch of refried beans, mashed avocado, sour cream or thick yogurt, sliced onion / chilli.
Cheese and a thin layer of pasta sauce from a jar.
Cheese and ham
Cooked chicken and anything you fancy.

Or any of the above and then pour over some pasta sauce and heat.

Wraps and a filling (veggie mince, peppers, sweetcorn for us) with grated cheese (I buy ready grated when away), salsa and salad. Often make the filling and take it frozen so it's an easy meal on the first night or two.
Falafel and flatbread as well is another easy meal. Just warm both in a frying pan.
Get a ridgemonkey and you can do cheese toasties, warm small pizzas or sausage rolls/pasties (bit of a time bind for 4 but ok for kids at lunch or if just 2 of you).
Microwave rice can be rewarmed in a pan with dash of water. Use other ring to make a curry with jar sauce.
Sausage, beans and instant mash (ok it's not great but needs must!).
Can you BBQ? We do that a lot on longer trips.

Thanks for the ideas, some good ones there. I take a deep frying pan, a collapsible saucepan and a steamer basket, plus we 've a ring with a small gas canister for outside. I looked at the ridge monkey, but don't think it's for us. Had a browse through the camping forum too, thanks for that. Just need some sunshine now!

I cook a casserole before I go and put it in the fridge in the van, have it with crusty bread on the first or 2nd night.
I never cook or fry meat in the van, I bought a two ring stove with gas canisters (Go Outdoors) that I use to cook meat outside under the awning, I also take a couple of disposable bbq's to change it up a bit.
In the van I cook:
Pasta and sauce
Poached eggs
Rice

Veg
Noodles
Stir fry but cooked in a drop of water instead of oil.
Basically I cook anything inside that doesn't spit fat or oil.
All meat is cooked outside and added to the pasta, rice and or veg.
I also have a microwave which helps, I use it for beans, packets of pre cooked rice etc

Paella would work in your deep frying pan.
Singapore noodles or a chow mein.

Consider using sachets of ready cooked lentils to warm through and serve with gammon steak or sausages. Cous-cous as an alternative to potatoes would work with anything in a sauce, use stock from stock powder for flavour, and you could try Idahoan mashed potatoes to save on time and gas.

Any sort of one pot dish. I do some with tins of green lentils. One has lentils, creme fraiche, bacon and leeks and whatever else I've got veg wise. The other one is lentils, peppers, bacon and tomatoes. They're really filling

Risotto (if you can be arsed)

Bacon, cabbage and potatoes

Do you have a griddle pan, if so things like steak, tuna steak, butterflied chicken breast, haloumi, veg like courgettes, tenderstem broccoli can be cooked in it very quickly and simply, just change seasonings and marinades for variety. Then just serve with some salad and new potatoes or cous cous, bread etc.

Shakshuka is a good one pot dish, just serve with fresh bread for dipping.

If you are by the coast pasta with chilli, garlic, olive oil and fresh sea food is really quick and easy.

I make curry, or spag bol and freeze them before we go - they'll last a few days in the fridge while defrosting then all you have to do is cook some rice or pasta to go with them.

My favourite camping stove meal from my childhood was a tin of ratatouille heated up with extra water and a bit if lemon juice and some black olives and then stir dry couscous into the pan. Delicious hot for dinner and cold as a picnic food for lunch the next day.

I used to use the packets to make mushroom stroganoff, pasta & pesto with bacon and peas ( we had a tiny freeze compartment)

we use to take a slow cooker that ran on the solar panels, slow cooker dump bags
