Boring question sorry! I've got a jar of green olives in brine in the fridge, been open a couple of months. It says use within 2 weeks!

Am I risking sickness by putting some on a pizza tonight? 🤔

Also while I'm here, a jar of pickled red cabbage been open 4-6 months...what do you reckon? Does it go off.

I rarely buy pickled things so don't have a clue

Pickling is a form of food preservation.
If it smells strange has mould etc then no but otherwise I'd eat it ymmv.

The olives will be fine, as long as the brine covers them they last an age. They would smell awful if they were off. The cabbage I can't help you with but smelling it would be my first port of call!

Thanks! I'm have tipped the olives out to inspect them but they look okay to me!

I find olives in brine don't last as long as those in oil. I do my own, mix of oils, herbs, garlic.

They won't make you ill. If a jar of olives does get a bit manky use it up by making a tapenade.
