I am doing this for our lunch but it doesn't have any temp/time for roasting details. It weighs 824g. Anyone know? It is an organic one so I am expecting it to be a more tender so would not want to dry it out and make it tough.

This organic site suggests you need to cook it slightly longer, as the meat is denser than intensively produced meat.

Give it 30 mins per 454 g then, are you putting anything on it to marinate? I would do it for an hour plus 10 mins or so and then let it stand with foil and a towel over it for 10 mins or so.

If it's 66 minutes per kilo,824g is 0.824 of a kilo so you need 0.824 x 66 mins (which is 54.384 minutes) plus 30 mins, so 1 hour 26 minutes.

Hubby worked it out as 1 1/4 hours. Do you thnk that will be enough?

Have put foil on the meat but nothing on the actual joint.

I would second that organic pork can take longer to cook as is much less fatty often as it has been reared more slowly, just keep an eye on it that's it's not drying out. I always do our pork leg nice and slowly in the Le creuset with a lid on it so it won't dry out. hope it's tasty!
