Done to death - but easy midweek dinners to make in a hurry?

Looking for some inspiration for some quick / easy dinners with min numbers of ingredients but relatively good nutrition. Anyone got anything?

Carbonara with just bacon, eggs and cheese, (10 mins from idea to plate) with bagged salad on the side.

A regular I’m doing now which is quick is to fry off some peppers/courgettes, chicken and chorizo, add harissa and some passata and a bit of stock. Then add some microwave rice (obvs can use normal rice but bags are quicker!) - all in one dish

Quick to prep or quick to get on the table?

Quick to get on table:

  • filled spinach or pumpkin pasta with spicy tomato sauce, fresh basil and salad.
  • Watermelon and feta salad with crunchy lettuce and black olives
  • Spaghetti with cream cheese, smoked salmon, lemon zest, chopped dill and peas
  • Steamed asparagus with poached eggs and serrano ham
  • omlette with crusty bread and salad

Quick to prep:

  • chicken tray bake of chicken legs with baby potatoes, cherry tomatoes, chunks of red onion and chunks of pepper, drizzled with a bit of olive oil, garlic paste , oregano and rosemary. Cook for 45 mins.
  • salmon steaks dressed with lazy ginger, sweet chilli and lime, roast for 25 mins. Meanwhile cook egg noodles, steam pack choi and sugar snaps, toss together in sesame oil and soy.
  • fry onion, peppers, chorizo, add rice, tinned chickpeas, veg stock, paprika, garlic granules and thyme. Cook for ten minutes. Steam some broccoli while it's cooking. Total prep time 15-20 mins.

Both quick to prep and / or quick to get to table, it’s for busy week nights when we get home from work or that one of us can throw in the oven at 5pm ready to eat at 6 etc

I always think Fajitas is the easiest/quickest. Buy whichever meat you fancy in mince form, then all you have to chop is an onion and peppers. I also add Sweetcorn, and some herbs.

Pesto pasta, or chicken/chorizo plus veg, chopped tomatoes and pasta.

Grilled gammon steaks, with sweet potatoes fries/baby potatoes with some butter and basil. Plus salad.

Roast a chicken, have with whatever you fancy. Salad/couscous/microwave rice.

A stir fry with noodles.

One I cooked earlier and put in the freezer. Could even be something to go on top of pasta. Can always rustle up something in 20 mins from the freezer

Tonight I made spicy spinach, tomato and chickpeas Spanish style (just onion garlic cumin paprika and tinned tomato base, pile in washed spinach and heat through a tin of drained chickpeas) with 7-minute airfryer salmon steaks. Bread, fruit and ice cream.

25 minutes of cooking, mostly hands off.

Bought flatbread base. Warmed

Feta cheese, crème fraiche, beetroot (roasted is tasty), rocket and toasted walnuts added to the top

We had pasta bake tonight, was lovely.

Dry pasta into baking tray
Tip in jar of tomato and marscapone sauce
Fill empty jar with water and tip that in too
Oven for 20 mins on 180
Meanwhile fry off diced chicken breast, mushrooms and peppers (I had chopped the chicken earlier in the week to save time)
Add to the mix after 20 mins
Add cheese
Oven for another 20 mins
Served with garlic bread

Was lovely and loads of leftovers too! X

Tonight we had orzo, chop and fry some smoked bacon add diced onion and garlic, soften add petit pois, a few handfuls, stir in 400g orzo cook for a couple of minutes, add 800ml chicken or veg stock, simmer 12-15 minutes. Add freshly grated parmesan or pecorino at the end.
Swap the bacon for chorizo, add olives/cherry tomatoes, swap parmesan for crumbled feta lots of variations possible takes about twenty minutes to get on the table

Tuna steaks with herby cous cous and green beans
Butterflied chicken breast with lemon and garlic (butterflying and bashing thin the chicken makes to really quick to cook) I just put them under the grill and serve with salad and coleslaw.
Cod fillets wrapped in prosciutto with veg.
Halloumi skewers drizzled with honey, with salad and toasted pita.
Pasta with prawns, garlic, chilli, cherry tomatoes and coriander.

Salmon in a foil parcel with baby corn, sugar snaps, tenderstem (or whatever veg you like really - I've done sliced peppers, sliced courgette), soy sauce, garlic from a jar, frozen chilli, frozen ginger. In the oven for the time it takes rice to cook on the hob. So quick and you can make the parcel ahead if that suits your day better

Katsu curry is a favourite here. Use frozen breaded chicken/fish to save time. Sauce is very easy to make from scratch and then serve with rice, microwavable stuff if necessary.
Salmon fajitas also a winner, cover salmon in fajita mix and some olive oil and grill. Serve with lettuce, soured cream and guacamole (homemade or shop bought).
