Non cereal breakfast ideas for weekdays

Hi! We are a busy, vegetarian household with two pre teens. Usually only one parent around in the mornings who can’t manage much due to disability. One child hates cereal. I know toast is a waste of time nutritionally and try to discourage it as they often have a packed lunch (sandwich or bagel, yoghurt, fruit, veg, smoothie and crisps) and don’t want to rely too heavily on carbs. Is there anything I’m missing for quick, easy, breakfasts (ideally that they can sort themselves) please? Thanks!

Greek yogurt with fruit and nuts. Toast is better than many cereals, especially if you have it with a nut butter.

DC sometimes have egg mayo (just a tiny amount of Mayo to bind it), made the night before, served in a toasted bagel thin. So they can have filling eggs without anyone needing to cook, and it’s some carbs but lots of protein

Scrambled egg in a wrap. My 9yo can make her own in less than 5 minutes in the microwave.

2 eggs in a jug/bowl
Seasoning
Grated cheese

30 seconds, stir, 30 seconds stir, 30 seconds stir, if you like them soft then probably done, if not then another 30 seconds should do it.

If making them for myself I leave out the cheese and add spring onions, chilli and paprika instead then a sprinkle of hot sauce when they're cooked.

Fried egg on crumpets or pikelets.

Scrambled eggs, wholemeal toast
Old fashioned but smoked haddock with a poached egg on top.

Toast is a great breakfast. You can have it with eggs, peanut butter, avocado, cheese etc. What about Greek yogurt with berries and a sprinkling of nuts/granola?

I prepare the night before: 2 tablespoons chia seeds, 2 tablespoons oats, 1 tablespoon ground flaxseed/nuts, 1 teaspoon maple syrup, handful blueberries: cover with plants milk and stir well.
in the morning I stir in some live plant yogurt.

You can pre make pancakes they will keep fine for next day, you can make them with mashed up banana as a healthier option

Toast is fine if it’s good quality (whole meal, seeded) bread with protein (peanut butter, cream cheese) and a piece of fruit,

or toast and yogurt and fruit

Or overnight oats

Flapjacks made with lots of different chopped seeds and nuts, dates, dried apricots, cacao powder if you like chocolatey ones, dessicated coconut - whatever you like.
I make a huge batch in one go and freeze them so I only have to make them every couple of months.

Thanks everyone some great suggestions. The microwave eggs may be the way forward as I don’t think they can handle pans etc and I couldn’t manage cooking in the mornings. Thanks.

I used to make pancakes, batch cook and keep in the fridge, add fruit and yoghurt.

I currently have yoghurt with flaked almonds and berries.
DS ( adult) has a slice of granary toast with peanut butter and sliced banana - he is naturally quite greedy but says this fills him up till lunchtime.
Eggs are great - if you are going to microwave them you can get poaching pods, or just boil them. Or you can cook egg muffins the night before with cheese/mushroom/ham/spinach/whatever - I have these for lunch sometimes.
