Beef mince to use but no carrots

Does anyone have any ideas? I was going to make bolognese but have realised I've no carrots, celery or pancetta/bacon so that seems a lost cause 😅

I have onions, garlic, leeks, courgettes, spinach, frozen butternut squash, but nothing red like peppers or carrots to sweeten anything.

Also have potatoes, rice, pasta, couscous

Any ideas gratefully received...

Go to Supercook recipes website (or app!) and put in what you do have and it'll pull up loads of different recipes you can make.

Personally I grate courgette into mince for bolognaise!

I am making the Jamaican patties on here last week. We had some last week and loved them. I froze left over mix and have just made more pastry for it. Delicious.

Beef Meatball Melt With Basil Oil https://www.gousto.co.uk/cookbook/beef-recipes/beef-meatball-melt-with-basil-oil

These are both delicious 😋 the second one might feel a little too comforting for the sunny weather but the first one should be just right if you've got the other ingredients to hand.

Or if you fancy something totally different look up recipes for Dan Dan noodles, we follow a recipe from a Pippa Middlehurst book and normally use pork mince but I've heard it's just as good with beef

The basilicious meatball sub looks and sounds delicious!

It's not really the weather for it but I'd make cottage pie, or mince and tatties. Or a very simple British version of a bolognese sauce.

Unfortunately nobody in this house eats beef now except me, but when I did make ragu bolognese it was to Delia Smith's recipe and involved onions, garlic, beef and pork mince, chicken livers, pancetta, red wine, tomato puree, salt, pepper, nutmeg, basil. It cooks on a very low heat in the oven for hours and it's glorious. Spoiled me for any other version.

I don’t usually use carrots, celery or panchetta. I don’t regard veg as sweetening, just givibg variety of flavours

I often just make what I feel like and sub with whatever I have. Butternut squash is sweet, onions too if you sweat them slowly. I would grate courgette in anything mince based (usually to use them up in summer, I end up with so many). Bolognese, chilli if usually have any tinned beans, keema, cottage pie, burgers, meatballs.

merrymelodies · 23/06/2023 20:14

I never ever add carrots, celery or pancetta to my bolognaise so I don't see the problem here...

LifeInAHamsterWheel · 27/06/2023 16:25

Soffritto (diced carrot, onion & celery) is well known as the base for a lot of savoury italian dishes! I'd never make a bolognese from scratch without all 3 of them OP so I get where you're coming from.

My question was about the need to sweeten food @ReallyShouldBeDoingSomethingElse There is no sugar in an Oxo cube - as you've proved by posting the list of ingredients!

Wheat Flour (with added Calcium, Iron, Niacin, Thiamin), Salt, Maize Starch, Yeast Extract, Flavour Enhancers (Monosodium Glutamate, Disodium Guanylate), Colour (Ammonia Caramel), Beef Fat (4.5%), Autolysed Yeast Extract, Dried Beef Bonestock, Flavourings, Sugar, Acidity Regulator (Lactic Acid), Onion Powder

BIWI · 27/06/2023 18:51

Yes - my bad. However, as sugar is so low down on the list of ingredients, its impact will be negligible. And one Oxo cube in an amount of sauce that will serve 4-6 people is not going to add sweetness.
