Dish ideas for multiple food intolerances

I'm struggling to think of dishes for a buffet that don't include any of the following, apart from salads and boiled eggs.

Gluten, dairy, legumes, fatty food, meat, fish.

This is for a lovely guest who doesn't want to make a fuss and is suggesting they bring their own, but I'd love to be able to offer a couple of dishes they can eat at least.

The buffet otherwise will have pretty standard stuff: good quality quiches, salads, cheese and meat boards, sausage rolls, bread, hummus, crisps etc, none of which they can eat, apart from the salads.

Any suggestions gratefully received!

Lost of supermarkets have great ranges for those with food allergies or intolerances. Online grocery shops allow searches or filtering for specific dietary requirements.
Ocado have some lovely gluten free foods for e.g.
You can also search for recipes online either by typing in what they mustn’t include or typing 3 or 4 ingredients you know the guest can eat.

Crispy tofu - you can flavour with spices in the cornflour - will go nicely with salad.

Guacamole

You can make flat breads with a gluten free flour really easily.

Stuffed peppers - stuffed with brown rice/bulgar wheat and tasty veggies/tofu

You can buy gluten free crackers etc for dipping

Bosh do some good recipes that you could prepare ahead their satay bosh bowl is delicious and can be eaten cold.

Is seafood OK? So e.g. dressed crab or prawn salad?

Are they intolerances or allergies? You need to check how sensitive for example the fish is. and whether your utensils or pans or cupboard may have traces (less likely cross contamination than nuts but best to check).

As someone with complicated food intolerances it can cause a lot of anxiety when eating out so don’t take offence if they want to bring their own food.

I often take my own food just so I can relax and not have to think about it .

Is she vegan or is honey ok? I’d get some chopped carrots and roast them with some honey- delicious and still quite ‘finger food’ also olives, sun dried tomatoes, and some simple salsa with gluten free bruschetta, gluten free tortilla chips (are these too fatty?) fresh guacamole and salsa. Veggie skewer (mushroom, red onion, tomatoes and courgette on a skewer, maybe seasoned with some chilli or garlic powder then grilled)

Maybe you could even do a veg antipasti board- roasted peppers, artichokes, grilled aubergine, dairy free aioli, courgette, mushrooms, asparagus, along with more ‘normal’ celery, cucumber etc. also I’m sure they do gluten free breadsticks

Same here. It's hard for someone else to knock up what is basically a very low FODMAP (exclusion phase) vegan dish or two.

OP, the stuffed peppers idea from a pp sounds good. That's why I had for lunch. Roasted peppers stuffed with a bit of white rice (safe), black olives, a few cherry tomatoes and seasoning. If I'd had them, I might have added mushrooms.

Flatbreads with g-f flour is also a good suggestion, with avocado or vegan mayo maybe. I can also eat pickles like beetroot, gherkins and jalpenos. (Not onions or garlic!)

Quinoa salad. Or tabbouleh (mint, parsley, lemon juice, olive oil, with quinoa in place of the usual burger wheat). You could add pomegranate seeds.

I would class seafood as coming under the fish umbrella in this case

@dreamingoaholiday are all of these intolerance or are some of them dietary choices?

There are some lovely rice salad recipes. If using soy sauce make sure is is gluten free though.

The no meat or fish is a choice. The others are intolerances. None are severe allergies.

Are they all intolerances? If they are it might be safer for them to bring their own food as cross contamination is more of a risk with a buffet

Oh, I'm not offended! No problem with them bringing their own food at all.

I just want to be a good host and offer something, and I will check the dishes are OK before making them.

Just a caution that if legumes are an issue, avoid tofu! Some PPs suggested it but it is made from soya beans.

It might be easier to find out what protein your friend DOES eat? Otherwise it's really just GF grains, nuts, fruit and veg isn't it?

Stuffed peppers is a great idea, thsnks (have spotted the no tofu comment) as are flatbread.

None are severe intolerances, which makes it easier. Cross contamination isn't an issue, within reason.

Ooh, this sounds delicious! Honey is fine.

I don't know about tortillas, but I can suggest them and see.
