I'm so sick of menu planning. Can anyone recommend any good recipe books for weekday meals which are reasonably quick but interesting?

Nigella Express. I use it all the time.

I really wanted to love Nigella Express - and I’m usually a Nigella fan - but I just don’t find much in there that appetising.

They’re recommended so much it’s almost a cliche, but look at the Roasting Tin books .

BBC Good food website - has a lot of good recipes,

Jamie Oliver’s One is good. Lots of recipes we have gone back to many times such as chicken and mushroom pie, Cajun chicken, shakshuka.

Books
East - Meera Sodha. Wholly vegetarian, but even as a meat eating household we get loads of use of out this, it's probably my most used book. Inspired by the Asian continent as a whole. Healthy and easy enough for weekdays and interesting.

Made in India - Meera Sodha. Brilliant book for Indian cookery, meat, fish and vegetable.

Fresh India - Meera Sodha. Wholly vegetarian, my least used book of Meeras, but thats a fault me me not the book, as I like every recipe I make from it.

Mezcla - Ixta Belfrage. The first half of this has meals which should be doable in 30 minutes. Meat, fish, and vegetable recipes. Inspired by her background growing up across Brazil, Italy, Spain, and UK and the dishes are really interesting and vibrant.

Youtube
Not what you asked, but I find these great for weekday inspiration.
Ethan Chlebowski. He’s American but cooks styles of food from all over the world. Probably my favourite as I think we share a very similar cooking ethos: reduce effort and time, make healthy, all while maximising the flavour and outcome.

Chetna Makan. Mostly Indian food. Good for everyday.

Marions Kitchen. Mostly East-Asian food. If I want to cook East-Asian food Marion is normally my first port of call, consistently good results and helpful in advising substitutions for some speciality ingredients.

I like two of Mary Berry's: Quick Cooking and Everyday. Lovely meals that are simple and don't take long.

The Roasting Tin ones are also great.

Does it have to be a cookbook? A meal planning app like Lollipopai might work for you.
