What best accompanies Christmas goose..?

This year we've decided to try goose instead of turkey and guess who's turn it is to cater...yours truly!!

Having never done it before I have been trawling through recipe books for ideas etc. So far, similar things seem to be coming out as going well with a goose.

For example, some variation of prune stuffing, perhaps with apples; apple sauce or cranberry sauce (quite sharp to cut through the fattiness of the goose), red cabbage as a vegetable.

Can anyone who has prepared a Christmas goose before and knows what works well with it recommend a stuffing and accompanying sauce to go with? Or am I along the right lines already?? I followed a link from another Christmas dinner thread and found the deliaonline goose lunch recommendations (which were; prunes and apples!!) So I guess that's the general trend!

Anyway, if anyone has any tips on what tastes good with goose, how to cook goose etc. I'd be very grateful Grin

We're going to have goose too lipstickmum so interested to see if anyone has any good ideas on this. Haven't thought about it other than making that decision though!

We're having Delia's Roast Goose with Forcemeat and Spiced Cranberry and Apple Stuffing. Have never had goose but think that, like duck, it could do with something sharp. (For Boxing Day I'm doing honey glazed duck with orange stuffing.)

Also trying to think of accompaniments. The girls don't like stuffing so I may do a home-made cranberry sauce as well, with potatoes roasted in the goose fat and parsnips done the same way (as, to my dh, it isn't Christmas without roasted parsnips). Might do Brussels Sprouts as well, for similar reasons. But would be interested to hear what others are having in case it gives me some more ideas!

I like the idea of spiced cranberry and apple stuffing too, is that a Delia recipe???

Yes, LM - I got it off the Delia online website. It's actually an entire recipe - goose with 2 different types of stuffing.

I can dig out our Josceline Dimbleby goose with apple and spiced ginger compote if anyone would like that recipe, we had it one year and it was delicious. BUT MIL won't eat goose Angry so it's turkey for us this year even though we are doing all the cooking.

I like the sound of Sophie Grigson's shallot, sage and hazelnut stuffing too, maybe I'll change my mind about the prunes... we only have one loo after all

my mum does goose every year. it is my favourite meal of the year. she recommends getting some of the fat off first by pricking the skin, standing it in a trivet in the sink, and pouring 3 kettles of boiling water over it (there's still gallons of lovely fat left for roast potatoes throughout the year btw).

she makes a stuffing with apples, brown bread, nuts and onions

we eat it with red cabbage, peas, and mashed potato

fabulous, thank god there's not long to wait now
