Best colours for baking.

I am getting really into piping icing, (since my kids told me that they don't like fondant anymore.).
What are the best colours to use to get really vibrant icing without affecting the flavour?
Also, the butter that I use to make buttercream always gives the icing a creamy yellow colour, which affects the final colour... is there a solution to this?

You can use a paler butter in the first place (French butter is less yellow than British butter, for example), beat it for longer, and add a tiny bit of purple to counteract the yellow.

No ideas on brands of gel colours currently with a good reputation. Wilton used to be the go to brand.

Thank you. I'll shall try some French butter, and a touch of purple colouring.

I use the Wilton Gel colours and they are pretty vibrant and easier to handle than the liquids, and wash out your skin after the inevitable mess! And even after making a really red or hot pink it didn't have a flavour noticeable over the spot of vanilla I put in.

Yes Wilton gels are brilliant

Definitely wilton gels and paler butter won't really matter so long as you properly beat it - it should go pale and fluffy before adding the sugar, takes about 10 mins

Also give it a quick whizz with a soup stick to emulsify- really makes the colour pop
