I made carbonara tonight using egg yokes so I now have 3 egg whites going spare. Any tips on what I can do with them?

Oh I would love to make chocolate mousse but I looked for some recipes and it seems to require both parts of the egg, just separated. Meringues it is then! Can I really freeze them? If not, how long do you reckon they will last covered in the fridge?

(actually I'm the opposite and frequently make pavlova and just chuck the yolks so could really do with your carbonara recipe!)

My MILs chocolate mousse doesn't use the yolks (she never knows what to do with them) and is the best ever.
I haven't got the recipe though as it is so awesome I daren't try to make it.

Personally I would freeze them, leave them in the freezer for a good 12 months then bin them.

But you can never have too many meringues, imo (except when trying to lose weight, of course, in which case they are deadly )

Oh, and they're quite good for throwing into soups to thicken them - just don't boil them or they sort of curdle.

I will see if I can find a non yolk mousse recipe or I'm making meringues (not that that's a bad thing!)
