How do you make them? i'm planning on making single portions - but they never come out how i make them.

Always use this recipe (I have to check quantities every time even though I’ve made them a million times). Super hot oil in cupcake tray. Fill 2/3s. No tips other than that. They come out great most of the time.

Here’s our go to recipe:

200g plain flour
200ml milk semi or whole
4 large eggs
pinch of sakt

mix ingredients to a smooth batter. Heat oils in muffin tray in 220 centigrade, when really hot (say ten mins) carefully bring tray out of oven and half fill with batter. Be as quick S you can, back in oven and cook for 15-19 mins. Don’t open door during the first 12-15 mins or they may sink.

Corrections/additions:

salt of course not sakt!

sunflower oil gives best results we find.

you may need to adjust oven temp and tunes depending on how yours works.

Mary Berry's recipe works every time for me

I also quite like James Martins recipe as well but find it makes a more sense pudding as opposed to Mary's light ones. I suppose it depends on what you prefer

Mary Berry is my go to for Yorkshires - they come out very light and fluffy.
