Easy work lunches/dinners

Hello!

I am starting a new job soon and desperately need some inspiration for lunch/dinner to take to work!

I don't have access to a microwave at work and I have no dietary requirements.

Thank you in advance! Smile

Sandwiches and fruit, boring I know but start there.

When I've been working I tend to go for a bento style lunch so 5-6 small 'things'

Couscous - plain or with veg added
Stuffed vine leaves
Bread or crackers with pate or cheese
Dips and veg sticks
Salads
You can make your own hot pot with a Kilmer jar, just add hot water
Nuts / snacks / crisps

Do you have a flask?

Soup - hot in winter, chilled in summer
If you have or get a food flask you could cook something in a slow cooker over night, take a portion for lunch and then portion up and freeze the rest.

I'd agree with a food flask especially for the winter, but with summer coming up I'd go for lovely salads.
Tandoori chicken with spinach, cucumber, celery, red onion, grapes with a mint and yoghurt dressing.
Leaves with hard boiled eggs, cherry tomatoes, grated carrot, spring onions, peppers and crispy bacon with a honey and mustard dressing.
Tuna nicois
Blue cheese, mixed leaves, cucumber, celery, sliced pear and walnuts
Salmon in sweet chilli sauce with peppers, sugar snap peas, coriander, shredded carrots, rice noodles and a generous squeeze of lime.
Chicken cooked in fajita spices with sweet corn, mixed beans, chopped peppers, pineapple and tomatoes. Serve with a spice salsa and some tortilla chips.
You could also make a ploughman's with cheese or ham pickles, celery an apple, some bread, coleslaw.
Fritata also makes a good and easily transported meal.

Falafel are also good, with salad, pita, hummus etc.
And a Greek salad with feta and olives.

I like salads when I'm in the office and often do:

Greek salad
Couscous
Orange and fennel salad
Tuna Mayo salad

I sometimes take overnight oats in a jam jar with berries in.

I need to make a lunchbox when I work at home because I just graze all day and eat rubbish.

A wide-mouthed Thermos is good. Fill briefly with boiling water in the morning, empty & add hot food - keeps hot for ages.
And please don't take smelly foods like fish, eggs or curry - unless you're the boss & have your own office !
