got to bring a pudding - for 16 people

Any suggestions gratefully received. I need to make (or buy) an impressive pudding.

I can practice making this weekend, but any suggestions would be gratefully accepted.

A chocolate meringue roulade can look splendid and go a long way.....dh makes it, I could get the recipe if it's the sort of thing you might like

Vanilla pannacotta with rasberry coulis, decorated with sliced strawberries and mint leaves. Very tasty, looks good and a breeze to make.

That is a lot of people so I would do something that is easy and can be done in large trays, so, apple or rhubarb and ginger crumble would be good. as would a peach cobbler(but not as seasonal).
Banoffi pie can be done in large trays too so would be good too.

easy peasy pudding is marrons mon blanc...
buy tins of sweetened chestnut puree, put a good dollop in bottom of each dish,then a good scoop of best vanilla ice cream, top with broken up meringue and a bit of whipped cream and grated chocolate

I have a recipe for a white choc cheesecake that comes out very rich so you only need a small piece - reckon it would easily do 16

Umm could I have the vanilla pannacotta recipe please. I like the sound of " a breeze to make".

I think it's going to be quite posh, husband's work colleague doing it, and I hear someone has to do canapes, and someone a cheese board and I've not met any of them before so I want something elegant and easy.

... chocolate roulade also sounds good but is that hard to make??

A tiramisù (I have a great recipe) or chocolate mousse (ditto) are easy and always popular.

I'd avoid cooked fruit type puddings - crumbles, pies etc. Lovely at home for a homely meal but not appropriate for this.

This is the recipe I use, but I make a rasberry coulis to go with it, and decorate it with fanned out strawberry slices and a sprig of fresh mint. When I make it for a lot of people I do it it a loaf tin, then turn it out onto a big platter and decorate (take the coulis seperately in a jug), then slice it like a terrine (for a few people I make individual ones in small ramekins).

For the coulis (for 16 people)
32oz raspberries
6 limes, juice only
16 tsp icing sugar

place the raspberries, lime juice and icing sugar into a mini-food processor until smooth. Strain through a seive into a jug.

Be careful when turning it out (the hot water softens the pannacotta very quickly).

I'd go for a huge trifle; looks impressive and really easy unless you feel you have to faff about making homemade custard - I just buy a carton of the fresh ready made stuff from M&S.
