I am menu planning..writing down all the meals that we eat to price up and then save money....but my brain is dead.

So far, I have remembered:
lasagne
spaghetti bolagnese
Shepherd's pie
Bangers, mash and yorkshires
Roast dinner
CHicken pesto pasta
Salmon pasta
Curry

Then some 'junky' meals that we eat when we can't be bothered.....

So what else do we eat?!?!?

How about:

Kebabs (fish or meat) with cous cous (or rice) and salad, with pitta

Stirfried chicken (or fish) and vegetables with noodles

(Tuna) Pasta bake

Fajitas - spicy meat/fish and vegeetables with flour tortillas, with rice, shredded lettuce, sour cream, cheese and salsa

Buy one of those huge Yorkshire puds, and fill with meat of choice, veg and gravy, and top with cheesy mash. Put under grill for a few minutes to melt the cheese a bit. I do this without the meat for myself and loce it for a quick meal.

Ha ha! We had it with the mushy peas yesterday too Grin Excuse - I get home much later than normal on a Thursday after being at the prison - takes me so long to get out of all the darn locked gates!!!

And if prepared night beofre, for a late finish or rushed dinner, try making the Jamie Oliver meal in a bag:

Make a big pocket out of tin foil
Fill it with your meal, add liquid and seal up by folding foil over.
Cook for about 20 minutes next night.

Fillings just need:

  • meat (chicken, pork, etc.) or fish (salmon, cod, tuna, etc.)
  • vegetables (cut as normal really; they steam in the 20 minutes of cooking, or use baby veg like corn, mange tout)
  • can add potatoes - like par boiled baby potaotes (or leave out and do seperate or serve with rice)
  • mushrooms
  • liquid - wine is lovely, but water works fine too - not too much needed. I use a small glass of wine or water
  • herbs, garlic, or whatever you like

Be careful when opening. That liquid is hot - I know !!!

Thats a good idea the giant yorkshires filled with meat and veg - think I will steal that one!

I meal plan about 50% of the time and since Ive been doing it the days I write a plan I spend FAR less and feel far more organised.

Popsy, shall we double up and do the same meal plans and compare notes! hey we could even do a synchronised shop

we love tuna pasta with veg/cheese any thing you like really. Also have fish cakes in the freezer so a quick meal is fishcakes mash and beans

Honey Curry Baked Chicken is quick, easy and tasty.

Preheat oven to 350F/175C.

2/3 cup
150mL butter, melted
Combine in a baking dish.
1 cup

250 mL liquid honey
1/2 cup
125 mL prepared mustard
2 Tbsp
30 mL curry powder

2 lb 1 kg chicken pieces, skinless

Roll in mixture to coat all sides. Place in pan, meaty side down. Bake 50-60 minutes, covered,until no longer pink inside.

Chickpea and spinach curry with rice and yoghurt.
Omelettes with ratatouille
Pasta with spinach and fetta
Pan fried courgettes with cumin,chill, lemon and fetta (Obvious that I lkie fetta?)
Chickpeas with roasted red peppers and fette
Spare ribs (dead cheap and easy to marinade.-mix tomato sauce, soy sauce, ginger, garlic, honey, allow to marinade for a few hours then bake/grill)
Tabbouleh
Whole baked sardines with salad and hot bread (so cheap and delicious.I buy a big bag of frozen ones from my fishmonger)
Endive,walnut and roquefort salad (only need a tiny bit of cheese so pretty cheap)
Lentil curry (cooked with coconut and tomato)
Vegetable curry
Chicken in soy (fry onions, garlic and ginger, add chicken pieces, brown then add some soy and some sherry. Simmer for about 30 mins
Good ole pasta with tomato sauce and olives,grated parmesan (I cook a huge batch at a time.)

Brik a l'oeuf(North African thing. Lay some sheete of phyllo pastry in a hot oiled pan. Crack an egg into it, allow to cook, then add some tuna and capers, fold the pastry over and viola!)

We are going to have to start budgeting a bit what with my maternity coming up then hopefully going part time.....

and Becca - yes, lets do a menu swap!
I need to feel more organised and in control of my money....rather than buying potatoes to just have themin the cupboard for 2 weeks then bin them
Does anyone else do that?
I am embarrassed by how much food we bin

Potatoes - I either have them for ages then have to thrown them away, or need them and don't have them.

Menu planning is definitely the way to go. I tend to do it for a week, then have a disorganised eat rubbish week, then do it again.

My contribution to the shared menu:
Gammon, jacket spuds and veg

My contribution to the junky meals menu:
Tinned chilli, chips and cheese with lashings of mayonnaise.
