What to do with haddock?

Hi,

I got a haddock loin (800g) from the reduced section in Tesco and am struggling to work out what to do with it! When I've cooked with haddock before (cullen skink, fishcakes, risotto etc) it's always been smoked but this is unsmoked. The only recipes I'm really finding online are basically fillets battered/breaded/lightly dusted with flour and I was hoping for something a bit more inspiring! Any advice?

This recipe is bloody gorgeous. But... don't precook the potatoes in the cream as they just burn and stick to the pan (bitter experience). I pre-boiled them in water for 10 mins and drained well instead on my second go.

Bake in a foil parcel with chopped tomatoes, olives, capers and a splash of white wine. Serve with rice.

Haddock is great in a fish pie. I smoked haddock also makes a lovely risotto or fishcakes. Could also make some lovely and healthy haddock kebabs.

Bake it with foil on for an hour, then test the potatoes are cooked through. If yes, remove foil and bake until brown. I'd forgotten that bit... scroll down and look at the tips section.

I've used haddock to make Ca Kho To before - my favourite Vietnamese dish. Traditionally it's catfish but I've always just used whatever white fish I had knocking about and it's always delicious. It's a caramelised, sweet, salty fish dish best served over rice (in my opinion!) Dead easy too.

Thanks everyone! In the end I made a variation of @AdaColeman's suggestion - baked with Mediterranean veg, capers, chorizo and sundried tomatoes with loads of garlic, herbs and hot sauce. It was gorgeous! I don't do enough cooking with fish so have noted some of the other suggestions for the future 😊

This sounds delicious! I make loads of Thai/Korean/Vietnamese dishes but have never used fish. Noted for future!

I use haddock or cod loin in a chilli fish recipe. Basically cube the fish, marinate with chopped chili, root ginger, garlic and saffron. Gently fry in olive oil/ butter, add a little stock and coconut cream, then a few prawns. Serve with boiled rice with coriander scattered over the top.
Plenty variations to it though - add chopped peppers or spring onion or mange tout. All options are good.

I like haddock in fish cakes - just fish and mash, seasoned and shaped into cakes. I add grated cheese, chopped onion and parsley, but you don't have to. Dust with flour to shape, dip in beaten egg and then breadcrumbs. Can be fried, oven cooked, air fried, whatever and they freeze well.
