Other than risotto... need suggestion for these chicken leftovers please

I roasted a chicken with loads of garlicy herby butter under the skin. Pancetta over the top and mushrooms. Gorgeous.

Any suggestions on what to do with the left overs? Would normally make traditional soup with the stock but too garlicy for that.

Anyone got some nice suggestions?

You can make a chicken and chick pea stew with Ras El Hanout seasoning (Barts) - chop up a couple of carrots and an onion, fry, add tin of tomatoes and some stock, throw in (pre-cooked/canned) chickpeas and chicken bits, finish with coriander.

I do chinese chicken rice sometimes which is pig easy and kids love it ... not got recipe but can explain how if you wnat

definitely make stock and make a minestrone with it? yum if garlicky

Personally, I would shred it all up, mix it with a bit of mayo and put it in a sandwich with a bit of lettuce!

Chick pea stew sounds good but [dim] do you put the seasoning in when you fry the onions? And how much would you use? Does it have chillis in? (sorry for so many questions LOL)

I love coronation chicken! Very 70's but bloomin tasty. Deicious served with a chewy warm naan bread.

Erm... now you're asking. I think you put the spices (2 tablespoons I think) in with the onion/carrot at the frying stage. Doesn't have any extra chillis - I think there might be some in the Ras El Hanout though (there's rose petals in there too! Very exotic.) It does come out slightly spicy - too much for my DSs (5 and 3). Wheely?
