Lasagna is undercooked

Bought a different (no pre cooking type) brand as I couldn't get my usual one. Assembled the lasgna as always - alternating white sauce, pasta sheets and red sauce. Baked as per instructions on the box - 180 for 30 minutes.

When I inserted the knife, the pasta sheets were still quite hard. I have returned it to the oven but worried it will be a dried up block now. Any suggestions to salvage it?

I never precook, but my lasagne always takes at least 45mins in the oven, maybe more. Put foil over it and put it back in the oven.

After many experiences like this I always pre-cook lasagne even if it says not to!

Thank you, I did bake for another 10 minutes, but the family was hungry so we had slightly crunchy pasta for dinner. I have extras of both the sauces, and a lot of lasgna leftover. Tomorrow I will cut it up, immerse in sauce then microwave it till the pasta gets cooked. Well hopefully!

I never precook lasagne sheets but I'd expect a lasagne to take at least 45 minutes in the oven.

Your sauces have to quite wet to cook the lasagne sheets

Do you mean pre-cooking pasta sheets? I never do that either, always comes out nice and soft. But I do cook mine for 45 mins!

I'd drizzle some water down the edge if it's looking a bit dry. Mine always takes 45/50 mins

Longer cooking was needed. If there are any leftovers I would put foil around the exposed side edges and put a good dollop of milk over before reheating in the oven, or microwaving as individual portions, again with a good dollop of milk.

At least 45 mins but I layer mine up with ragu and béchamel and then pour the Passata down the empty sides. Then béchamel and tonnes of cheese on top, it never dries out but you really have to factor in how much liquid a pasta sheet needs to absorb and factor it into your recipe. Send us a pic OP!

I'm slightly disturbed at the idea of someone layering up a lasagne with dry pasta and putting it in the oven for 30 mins TBH Grin

I'm sorry if about to disturb you but I’ve just just my lasagna in the oven with dry pasta sheets and usually leave it for about 30 mins.

The ragu has been cooking for ages and is pretty moist, the Béchamel sauce is also very moist so it’s always cooked through 😬

I’ve worked it out why mine works (and was delicious) at 30 mins.

I use a shallow dish with only 2 layers of pasta!

A good lasagne needs about 45 minutes minimum with dry sheets. Try cooking a little earlier, for a little longer, on a lower temperature as well if you have the time :)

Yeah- at 160, and leave it rest for 15-20 minutes before serving.

2 layers!! That’s a pasta sandwich! I like at least 5 layers, my sauces are rich and thick, but still don’t precook as otherwise the pasta is mush. But, I like a lasagne you can slice and stays standing, no sauce running out. I tend to cook longer on a lower heat, and love a cold slice for breakfast the next day!

Not in UK so the brands won't be the same.
I usually use Barilla lasagne sheets, the no boil ones. The instructions say bake for 20 minutes (yes!), and it's perfect!
This time I used a different brand, which said bake 30 min, and I dutifully did. Maybe my sauces were not wet enough. These sheets do seem a lot thicker though, and more stodgy to eat as well.
DD loves her pasta so still ate it happily (me and DH not so happily). Today I plan to cut up the leftovers and cook with more sauce.
To use up this box, from next time I will pre-cook, though I find it a bit tricky to handle the slippery sheets. And then, back to Barilla it is!

OP - next time rather than pre cook I would just have a runnier sauce and, if you are able, prepare one day and cook the next.

I'm not a bad cook but I've never been able to make a lasagne and cook and eat straightaway- how always needed the dice to soak in.

Good luck - I bet it's delicious either way
