A proper old fashioned chip pan with basket

I'm going to stick some blocks of beef dripping in it and have chips like I had as a kid

I'll have the damp tea towel on stand by and out a new filter in my extractor Dan but omg am I looking forward to the taste test !!!

My mother would use ammonia to clean the grease from the kitchen surfaces, at least once a week.

It was like walking into a bottle of smelling salts

I used to have chip chips
Round chips
Cubed chips

Ooooooo proper chips deep
Fried in beef dripping

Not often like I don't want to end up a blimp but oh my .....

Not to be recommended when pissed .

I used to cook for myself from age 11 . I'm 51 now and used to wield the chip
Pan with no issues .

Can't see why you'd need to use ammonia ?

Beef dripping sets hard - so you melt it slowly , get it to high heat (drop one chip in to test )

20 mins . Bobs your uncle .

Then you let the dripping set hard , lid back on , store away .

It's no worse than a deep fat fryer and much nicer than oven chips .

I rarely eat them tbh but I figured if your gonna do chips - do chips !

You drain the chips on kitchen roll on a plate - no mess

Ammonia, like sodium hydroxide (main ingredient in a lot of drain cleaners) is alkaline and saponifies grease

Cuts through grease far faster than some of the best detergents

First rule of a chip pan :

Never wash the chip pan ! Sounds awful but you don't wash them . Same as Yorkshire pudding tins . You never wash them either .

Maybe when I change the dripping I'll spin it through the dishwasher. But I'm not planning on chips for breakfast lunch and dinner .

It will be an occasional treat .

No, but when you use it a layer of beef fat will go all over your kitchen surfaces. A fine layer granted, but it'll need cleaning off.

Oh, cubed chips! Haven't had those since I last owned a chip pan, <blurred> years ago. You may have been pissed, but I applaud your decision! There really isn't anything quite like properly, freshly-cooked chips 😋
