GLUTEN FREE PASTRY- HELP

I've made this lots of times with Dove flour and it's always awful. Rock hard.

Anyone got any tips?

I usually rub in the butter as you would with normal pastry.

Should I use a different form of fat? Veg fat? Hard butter, soft butter? More water, less water?

I'm hoping to make a Coronation quiche for a guest who is gluten-free.

Just buy Just-rol gluten free pastry, it’s great! Suitable for vegans too.

Agree with pp. We make most things from scratch but for GF pastry we always get ready made (and follow the instructions to the letter as its really delicate).

My recipe is

12oz GF plain flour (I use Asda)
3oz lard
3oz marg or spreadable butter
1tsp xantham gum
1 beaten egg
80mls very cold water

Rub together flour and xg with the fats, once its like completly rubbed in mix in the egg and the water. Then knead like bread until its a smooth consistency.

Wrap in clingfilm and put in the fridge for at least 30mins. Then roll out like normal pastry and using plenty of flour.

I use it all the time for Quiches/pies etc

I've tried so many times with the Doves farm, and never get it right. And I don't find the shop bought much better to be honest, it's still hard to work with.

It makes a lovely sweet pastry as well if you add sugar to it - its especially good for mince pies at Christmas.

I find its a bit rubbish thoygh for things like quiches where you really need a short pastry though. It goes too crispy as it's technically a puff pastry which hardly puffs

On a side note, I make little mini "quiches" in muffin tins using gf bread rolled thinly instead of pastry. Good for using up old or reduced gf bread, and less fattening than pastry. They are great for freezing, picnics on the beach, Christmas etc and are always popular.

I use the Genius ready made shortcrust. It is a bit more fragile than normal pastry but it tastes okay. Making pastry is not my strong point and I have never been able to successfully make gf pastry

Unfortunately it's totally out of stock in Waitrose- supply issue- which is where I shop (no other supermarkets near me.)

Add a beaten egg and some xanthan gum make sure you chill it for as long as you possibly can and then press it directly into the dish rather than try to roll it out and then transfer - saved myself lots of tears doing that!

People saying use ready made gluten free pastry, I can only ever find puff pastry. Do you have any recommendations where I can get shortcrust gf pastry?
One tip I did get from the Jane Devonshire books is to roll it out between 2 sheets of cling film, then it can be transferred to a flan dish/pie so much easier.

It’s in the freezer section. Not all supermarkets stock it. Tesco and Morrisons don’t. Asda and Sainsbury do but only in certain stores.

I'm using a gluten free wrap instead of pastry for mine. It works well for quiche usually.

We buy Sue's gluten free kitchen shortcrust pastry from Ocado. Changed our lives. Even the non GF in our house are happy to eat it. Really really good if you happen to shop at Ocado. It's things like this that Ocado sell that stop me being able to shop elsewhere.
