I'm after some new ideas for veg to try to interest my dd1.
My partner and I are pretty boring where veg is concerned either we have a meal with veg in it like bolognese/risotto/cottage pie etc or we do frozen veg on the side of a meal (normally peas/sweetcorn, mixed veg, broccoli or green beans) or sometimes a salad bag. We have been quite happy with this and on weaning so was dd. However in the last month she has got quite fussy and is now eating next to no veg. If it's in a meal she might eat some but often picks round it, if it's separate she won't eat it at all- except baked beans which she loves!
We realise our way of having veg is quite boring/repetitive (although we were happy with it) so looking for ideas for either different ways to cook veg or different veg to try her with.
However neither of us enjoys cooking so needs to be low effort (hence our choice of frozen veg) and also not expensive.
She is dairy free so things like cauliflower cheese are out- needs to be things we will all eat and neither my partner or I will eat dairy free cheese.
Any ideas?

I simmer the butternut for 15- 20 mins, depending on the size of the chucks.

Yes. I tend to separate the butternut from the stock, then blend the squash gradually adding the stock until I have the right consistency. I usually add cheese, but I see you are looking for dairy free options.

Enegvita is a cheese/yeasty taste, powdered yeast, great sub for cheese so
caulil or broccoli cheese works ok with it

Have you tried making falafel, I make baked falafel made with sweet potato and chickpeas. Or a jacket sweet potato.
I really like cauliflower, quickly blanched and then rolled in egg and breadcrumbs before making. You can add flavour to the breadcrumbs if you like, black pepper, herbs, Nigella seeds, garlic, paprika etc. Then just spray with oil and bake until crisp.
Do you make stir fry's, add things like bamboo shoots and water chestnuts.
Asparagus is in season in the moment, you say dd loves eggs, could you do her a soft boiled egg with asparagus and tenderstem broccoli soldiers.

The one time I gave her baked sweet potato she gagged and completely refused it, however I have since found she really doesn't like tuna and that was what was in it so may try again with beans as she loves them!

I love a stir fry and she used to like them but last couple of times she has refused to have anything to do with them.
She doesn't seem to get dipping which I guess would be the point with the asparagus. Will try asparagus again though as we love it and hardly ever have it

Theres a good series on channel 4 called Jamies meat free meals. Some of the recipes on there are fantastic and you can tweak them by using dairy free yoghurt or milk where he uses them.

She doesn't really seem to get dipping strangely but I will try it with celery and peanut butter as she loves peanut butter
