jam will be sweeter than the St Dalfour stuff but I'm sure it'll be fine.
If in doubt next time maybe try the Bon Maman cherry compote, which is lush

DarrellRivers · 15/02/2008 19:57

the cherry compote looks also v tasty

meridian · 16/02/2008 10:04

mrsbadger- that cherry compote sounds nice.. dh is obsessed with black cherry jam at the moment.. not made a cherry topped cheesecake though made several key lime ones, and mandarin orange... oh and mustn't forget the dark chocolate and marscapone cheesecake .. very very naughty..

I much prefer the nobake recipes though.. less work

My cheesecake went out without me last night.
It was my SIL's b'day party , but DD got feverish so i stayed at home.
Everyone loved the cheesecake and gave it rave reviews.
Only prob, everyone else got to eat it apart from me. DH didn't get his arse together to bring me a slice home

I have made a cookies and cream cheesecake. I didn't realise it had to be in the fridge for 3 hours so we are having it for tea instead of lunch!

I use Philly.

NAB3wishesfor2008 · 17/02/2008 17:10

OMG! That was good. Feel stuffed though.

princessosyth · 17/02/2008 17:18

I always use half the amount of cheese that the recipe states. I always find that it tastes too cheesy if you use the full amount.

NAB3wishesfor2008 · 17/02/2008 17:22

I wish I had seen that before, princessosyth, as Ds1 and DD thought it was too cheesey. Will do that next time.

were you using the springform tin?
if so, undo it r e a l l y s l o w l y and ease any bits that look like sticking before they come away from the cake.
Leave it on the base of the tin, don't try transferring it to a plate.

buttering it lavishly first helps, as does whizzing a knife round the inside of the tin before unmoulding (use a plastic one to avoid scoring the nonstick)

as the fruit goes on after unmoulding I normally just squish it back together as best I can, cover it all with the jam and serve myself the wonky bit.

hang on .. does quark work for cheesecake? really?

because cheesecake really fattening and I love it .. but if quark works then wouldn't be fattening

MrsBadger · 17/02/2008 19:33

apart from the buttery biscuit base, of course...

no, I mean a tin with a clip on the side that means you can take the 'walls' off and leave the cheesecake standing on the base

like this

taking it out of a solid tin will never ever work, better to make it in a flan dish and serve it in the dish

or if you have a loose-bottomed pan you can do this
