I also have streaky smoked bacon ,potatoes ,red lentils ,eggs .

I had a quick go at entering ingredients on "SuperCook" website but think maybe I didn't use it correctly as it came up with popcorn and ways to cook butternut squash. Is there an easier to use site ?

We are staying in as have Covid and trying not to pass it on .But supplies are running low .

homemade pizza?

PetitPorpoise · 11/04/2023 13:17

Leave out the eggs and cheese and you could make a soup?

Eggs and cheese will do omelettes. Could even use the bacon for those instead.

Marchforward · 11/04/2023 13:18

Curry
A version of Somerset stew
Omlettes

WitcheryDivine · 11/04/2023 13:18

Cook some/all of the veggies up together into a sauce, mash the potato, assemble like a shepherds pie and cheese on top then bake.

GeraltsBathtub · 11/04/2023 13:18

I’d probably turn all of that other than the eggs into a soup. Do you have pasta or rice? BNS and leek risotto could be nice or the BNS could also make a good pasta sauce, maybe with the tomatoes as well.

MixedFeeling · 11/04/2023 13:18

Chickpea and BNS curry, using your toms as well and leek in place of onion. Do you have rice?

LordEmsworth · 11/04/2023 13:20

Do you have spices? Dahl, egg curry, chickpea curry, and/or roasted squash.

Leek, bacon & cheese stuffed jacket potatoes.

Roasted leek & squash with a poached egg on top.

Mock tartiflette, with cheddar / leek & potato gratin with bacon.

Lentil shepherds pie-style pie, with bacon.

AtleastitsnotMonday · 11/04/2023 13:20

I'd make a leek, BNS and bacon bake, topped with cheesy mash.

gogohmm · 11/04/2023 13:21

I'd cook a vegetable and chickpea stew the top with potatoes and cheese

gogohmm · 11/04/2023 13:21

Moroccan dish minus the cheese if you have the spices

pizzaHeart · 11/04/2023 13:25

You can do risotto with leeks and butternut squash. Soup with lentils, chopped tomatoes and some bacon. Or curry with tinned tomatoes, onion, chickpeas and bacon. Omelette with egg and cheese or frittata with leftovers cooked potatoes, egg and cheese plus maybe small cubes of butternut squash.

viques · 11/04/2023 13:27

Use the onion, tinned tomato, butternut and chickpeas to make a curry.

or make the curry without the butternut and use the butternut and bacon to make soup

use the leeks and cheese to make a leek gratin , cover with sliced cooked potatoes and a bit of extra cheese and finish off in the oven / under the grill.

EnglishGirlApproximately · 11/04/2023 13:27

Do you have spices and flour?
If do I'd do a leek, bns and Cheddar quiche or pasties and a chickpea curry with the rest.

MarkWithaC · 11/04/2023 13:27

If you have spices and some things like garlic and maybe fresh ginger, I'd suggest curry/Indian with the leeks, squash, tinned toms, onion and chickpeas or lentils. Google the ingredients and 'curry' or 'Indian'. Also try googling for Nigel Slater recipes; he does some lovely Indian-style things.

When you are better and shopping again buy some frozen ginger, it’s brilliant, I also use frozen garlic so I never run out of that either ….

Snoken · 11/04/2023 14:02

A version of shakshuka? With tinned tomatoes, chickpeas, lentils, leaks, eggs. You could dice and roast the butternut squash and add that on top too.

In rare bursts of efficiency/good sense, I've blitzed a large quantity of fresh garlic and ginger in the food processor and frozen it in ice-cube trays. You can also make combo ones ie one cube of 50/50 garlic and ginger, or customised ones including lemongrass, fresh chilli etc.

Or you can do what I do and buy it ready done! 😁but I admire your energy and efficiency. Either way, they are very useful things to have on standby.

I often use ground ginger in place of fresh - it's not exactly the same but it's in the same profile.

Definitely squash and chickpea curry potential there.

I did say 'rare' Grin I think I've done it about three times ever. But otherwise I buy a bunch of lemongrass, use one or two bits in a dinner, and then the rest rots in the fridge...

This is why I do it too, wrinkled bits of ginger, sprouting garlic, been there, then walked to the compost bin.
