Depends on whether you want a meat one or not. If you don't mind having a veggie one, lentils replace the meat quite readily and are considerably cheaper. I tend to use whatever veg I have in the fridge/larder - tomatoes, onions, peppers, mushrooms, plus carrots (diced very small), etc. For the cheese sauce, I tend to use an inexpensive cheddar - you don't need to worry about taste as much as it just forms part of the overall flavour of the dish.

Oh and don't forget the garlic and herbs!

veggie and meat would both be good. embarrasseing question - do you have to cook the lasagne sheets first and mince first or do you just chuck it all in the dish and in the oven uncooked? i love one pot cooking me............................

cook the mince first - but not the lasagne sheets. A nice touch (but fattening) is instead of making a cheese sauce use double cream and just grate some cheese into it - yum! (its easier too!)

cook meat but not the lasagne .. just pour that on top

brown mincemeat, throw in chopped onion, mushrooms, pepper, garlic, basil, rosemary, oregano and a bay leaf .. splash of worcester sauce / stock cube

make white sauce and add cheese

then layer it ..meat, cheese sauce, lasagne strips .. finish with cheese sauce and sprinkling of grated cheese

cook in oven for about 45 mins (around gas 5 or 180)

I would just use white sauce (flour, marg, milk) with a clove of garlic crushed in it. Only use the cheese for the top, even cheaper sprinkle the top with oatflakes. An anchovy or two crushed in the tomato sauce makes all the difference too

With regard to pre-cooking the lasagne, check which lasagne sheets you have. The dried ones generally do not need pre-cooking, but there are some which do.

oops .. totally forgot the tomatoes in that recipe .. but you knew to add tin of tomatoes and some puree

(even better cheat is brown mince and add a jar of Lloyd grossmans tomato and basil sauce plus some garlic .. dead easy and quite yummy)

like the cream idea Jools .. will wait till am off diet to try it though
