Has anyone got a recipe for a healthy, but yummy, cake? Our dd hasn't had any sugar or eggs yet and loves fruit, but I can't find a simple cake recipe on those lines anywhere. I am not the best cook, but was thinking of baking it on Sat ready for Sun and have a great 'One' candle to stick on the top -- fancy shapes and icing are probably a bit beyond me!

did you know that you can recreate that that hula hoops on your finger feeling with carrots? slice them and push the middle out. de-daah - carrot hoops. that 's what you get in sw london dontcha know.

Sorry if this is way too late and the thread has moved on, but we made this one for DS on his first birthday and it was YUMMY.

taken from Yummy! Every Parent's Nutrition Bible by Jane Clarke

Carrot Cake

300g wholemeal flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon mixed spice
175ml olive oil
150ml apple concentrate
2 medium eggs, lightly beaten
2 tablespoons maple syrup
175g grated carrot
1 apple, grated
handful of sultanas

For the topping:-
250g mascarpone cheese
2 tablespoons natural yoghurt
2 tablespoons maple syrup
2 teaspoons vanilla essence
zest of 1 orange and a squeeze of the juice

Preheat the oven to 180 c/Gas Mark 4.

Grease a round baking tin 20cm in diameter and line the base with baking paper.

Mix the flour, baking powder and spices together in a large mixing bowl. Mix the olive oil, apple concentrate, eggs and maple syrup together in a jug and pour over the dry ingredients. Stir well. Add the grated carrot, apple and sultanas to the mixture, gently stir through and pour into the tin.

Bake for 1 hour 15 minutes until you can sink a skewer into the centre and it comes out clean. Remove the cake from the tin and allow to cool. Mix all the topping ingredients together and cover the cake.

noooo Mrsruffallo - look closely next time you slice some carrots - it has a middle bit that just pops out. cucumber would be terribly messy.

I agree with Mrs B as ever. I would be really concerned at 1yo only eating fruit purees and mush.

Actually if she is still only on single ingredient meals then any cake, even one with no eggs or sugar, will be a bit much, no?
Doggies, I am sure yr eggless cake will be yummy, but it has a good reason (vegan). I had a pal whose daughter had an egg allergy so she made eggless cakes too. Not sure why OP is so worried about DD having eggs.
Somewhere I have a recipe for courgette cake with no sugar, will try to dig it out later.

BTW Hbabbibu that cake is yumptious!

If you are going down the eggless route do try the cake I linked to, is by proper food bloke and all.

Sorry, LittleMy, but 'wholemeal flour' and 'cake' do not sit easily together, I feel.

I am far more of a ponce about fair traded chocolate and would like to assure you that the cake, its icing and the chocolate crispy cakes in the (fair traded fabric) party bags will be made with fair traded chocolate. Ooh yes.

lalibela, nows the time to give eggs and sugar unless there is a medical reason why not. Its a Birthday treat FFS! A piece of cake as a treat is not unhealthy for a 1yo.

Clary, my post a page or so back explains the whole sore gum/mush things. DD eats mixed ingredients, but only if very mushed up -- so yes a solid cake probably not going to be her fav thing at the moment.

Have been worrying away about her refusal to eat anything solid, but am assuming its just a phase/that all babies are different/ that next month she'll happily be back to a bit of toast. When I look in her mouth there are blisters on top of the molars coming through, so I guess it's just very painful for her to chew lumps at the moment.

I haven't been using eggs so far because I assumed that they'd make things like fishcakes more solid -- but I am such a novice in the kitchen that that could be nonsense. And I haven't used sugar so far, because it hasn't seemed necessary (though I'm guessing there is some in the petit filous and fruit things I've been using).

I'd love some suggestions about soft, but appropriate, things to feed a sore mouthed one year old. But I'm so heavily pregnant and hormonal I'm too scared to start another thread here -- anymore mumsnet observations on my feeding failures and I'll be hitting the cake tin myself!

lalibela, hang in there, I'm afraid I don't have any recipe suggestions, although know you can make sticky date cakes with orange juice and no sugar, flour or eggs, but have no more information than that.
MN can be a bit offputting sometimes, but you have got some good recipe ideas, so try and concentrate on them and ignore the slightly more critical comments.
If I was heavily pregnant, this thread would have had me in tears I expect, so please let me extend a virtual "hug" to you

If she has had petit filous then she has had sugar, yes. So I wouldn't worry about sugar in a cake.

Poor lali! I guess I avoided cake a bit as she showed no interest, so I didn't see the point in offering it. She's kind of interested now, but can take it or leave it, which I think is a bonus.

Sore mouths - I think Aitch's dd was a big fan of frozen peas and blueberries when teething. Some like to chew celery - not mine.

What about a summer pudding, line a basin with crustless bread, fill with squishy red fruit, top off with bread, heavy weight on a saucer on top, fridge for abour 4hrs, ready when bread turns pink.

Petit filous, have a lot of sugar in them, just to let you know. Once she is one, if you want a healthy option, give greek yoghurt with honey mixed in instead

Agree 100% with Overrun- it's a pity people have to be so rude. Fair do's to you to want to feed your dd as healthily as possible, which doesn't have to equate to gross or deprivation, as people try to make out.

You must be able to make a cake with honey and bananas. Here we go:
3 oz honey
4 ripe bananas
2 cups plain flour
Cup milk
cup raisins
Mix all together put into loaf tin and bake at er 275 for er 30 mins.
Mix together 6 oz cream cheese and er some more honey. Ice. stick in candle. Chop up and put in bin.

So, what you really need is a soft, squidgy pudding type cake, yes?

How about something like a trifle - looks very celebratory, imho - make a standard victoria spongue, break up, sprinkle with apple juice, then cover with one layer mushed up fruit (frozen packs of raspberries are good, one layer fresh custard (ideally mixed with some extra whipped cream), one layer cream
Leave for a while in the fridge to make a lovely gooey mess
