Can anyone explain tofu to me?

I have a recently developed egg intolerance; used to love them, now they make me almost instantly vomit.

I am really missing them, especially when it comes to easy, high protein breakfasts. I've been recommended scrambled tofu as an alternative but don't know where to begin! I couldn't even find it in the supermarket, didn't know if I was looking on the shelf, in the fridge...?!
Any guidance would be really appreciated...where to find it, how to cook it?!

You should be able to find Tofu in any supermarket nowadays. It will likely be in the fridge section somewhere. It's made from soy milk so should be fine if you have egg intolerance. Personally I find it incredibly bland so you will need to mix in something else to give it flavour.

For scrambled tofu you’ll need silken tofu, rather than firm. I think you can get silken tofu from most large supermarkets now, though the firm pressed block tofu is still the most popular. Meera Sodha has a recipe for scrambled tofu, which I haven’t tried as cooking tofu at home is mixed for me, but if you’re unsure maybe the big flavours in here will appeal.

My favourite tofu dish is Ottolenghi’s black pepper tofu, but it’s totally different from scrambled eggs!

I've tried dozens of different tofu scramble recipes but this is the one everyone in the family likes.

We prefer it with firm tofu but you can use silken tofu if you prefer a softer scramble. The magic ingredient is the kala namak (Indian black salt), which has an incredibly eggy taste. It's widely available from South Asian groceries, Health Food shops, and online (Amazon, ebay).

It's usually in the chilled aisles with dairy free stuff

Firm tofu often with veg/vegan food in chilled aisles. For silken tofu, look in the world food aisle.

Another vote for the meera sodha recipe. It is absolutely delicious! The silken tofu is often in the ‘world foods’ aisle near other asian cooking ingredients. It is a long life shelf product so no need to fridge.

the best firm tofu is the tofooo brand. It is in the fridge section, usually the plant based / vegetarian sections with quorn ham and stuff like that. Should be really easy to find. It won’t work well for scrambled tofu though.

my absolute favourite tofu is this sesame smoked stuff they sell in Waitrose. It is expensive so not bought recently but for a treat it is incredible in a pad thai.

if replacing eggs in baking there are lots of alternatives
