Make-ahead gluten-free dessert for Easter family lunch

I've offered to make a pudding for my MILs Easter lunch (roast lamb). My dd is gluten-free. Any suggestions welcome!

I made a salted chcolate tart early this year which was great. GF Oreos (or the own brand version at least) are easily absolve at Tesco and not too much more expensive than the standard Oreo’s. Cheesecakes and similar biscuit based tarts like banoffee or key lime pie work well with GF biscuits, as when crushed, soaked in butter and topped with something, the biscuits themselves are fine.

Lemon posset are also super easy, and you can raven freeze them. I made this recipe and got six out of it, even though I’m generally a big pudding eater. Depends whether your daughter would miss the crunch of a biscuit along side.

I default to cheesecake too. I made one the other day with the M&S free from digestive biscuits and they work fine (in general, my DF - coeliac for nearly 40 years - thinks M&S has the best GF range)

You can get gluten free hobnobs which make a really nice cheesecake base. Otherwise I've made a really nice flourless chocolate pudding before - it turns out super fudgey and delicious. I'm sure you could bake that in advance and then pop into the oven to heat up.

Nigella has a really nice recipe for gf, dairy free, chocolate olive oil cake. It sounds terrible, but it delicious. Have it with cream / make some sort of custard to go with it

Mary Berry's chocolate roll with fresh cream and fruit. At Christmas I do it with dark choc and cherries. In spring you can do white choc and raspberries or mango with flowers on top. I usually flavour the whipped cream too - vanilla or caramel or orange.

Nigella's pavlova instructions are pretty foolproof. Go on - give it another go - if you're doing it well in advance you can have a fallback position, and four eggs and some sugar (plus a teaspoon of cornflower and a splash of vinegar (my mum used to use chip shop malt and it was still fine))are a relatively cheap investment if it all goes wrong.

This moist, puddingy cake is a classic and so easy. Such a weird recipe, you can't believe it will work, but it does. Make sure you pick a gluten free baking powder; other than that it's just eggs, ground almonds, oranges and sugar. Would be nice served with a blob of creme fraiche.

TBH we I just use whatever spare gluten free biscuits we have in. The best result so far has been a mixture of some Morrison's gf crispy cream crunch type biscuits and some Morrison's gf digestives

I make lemon possets in ramekins, but that might take up too much fridge space if it's for a lot of people.

I'm coeliac, and if I never see another pavlova, chocolate brownie, or fruit salad for pudding again I'd be quite happy.
Look at Becky Excell (Gluten free and a cuppa tea) - she has a lovely mini egg cheesecake which is super easy and feels like a proper celebration
