Homemade Pizza Recipes

Hi all,

Please can you share your favourite home made pizza recipes (including the tomato base?), the ones in the supermarket are no ridiculously expensive (and/or taste terrible), so I'm looking to make them from scratch more often. I have a kitchen aid mixer so can use that to help!

I always buy the Northern Dough company frozen pizza dough but I don’t follow the instructions. I let it defrost, roll out and pop it onto a really hot frying pan, add the pizza sauce, cheese and toppings and once the pizza dough starts to bubble around the edge transfer to a hot oven straight on to the shelf.

for the tomato sauce based triple concentrated tomatoe purée, fresh garlic, teaspoon of sugar and salt and pepper to taste. No herbs as I add fresh basil as a topping usually.

The tomato sauce I do is almost the same as the bbc one - I use the best tomatoes I can afford at the time - preference would be mutti but purse doesn't always suggest that is a good idea!

I just smear tomato puree across it too. A wetter tomato sauce just makes the dough soggy in a domestic over. It would be OK if you had a professional pizza oven at 500ºC.

We make our own pizza regularly but it can be quite a pricey meal if you have a few toppings.

We use this recipe for the dough

But I don't add lots of salt.

We buy grated mozzarella and a ball too to add to the toppings

500g strong bread flour
7g yeast
4g salt (I use reduced sodium salt)
300ml water

Mix til you have a smooth dough, knead 10 mins or 5 in a stand mixer with a dough hook
Leave to rise, either out of the fridge for as long as you want really but longer better up to maybe 5-6 hours. Or in the fridge (I go in a sealed freezer bag) up to 48 hours.

Stretch etc.

I mixed tomato puree with garlic puree and some water until I get to a suitable consistency.

Then add mozzarella (ideally the block stuff as less watery but any will do if you drain it thoroughly), with prosciutto and Gorgonzola is my favourite.

We use this one and it's handy as you use plain flour rather than bread flour.
I use passata or a jar of bolognese sauce for the base and then whatever else we fancy / have to hand to top.

I also made it with my year 3/4 class and we made mini ones ( each recipe split into 4) and they loved it!

My biggest tip would be to mix your sauce and your toppings together, so I will do a tomato sauce with meat, onion and red pepper, seasonings, then put that on the pizza dough and top with cheese. It's so so good 😋

I make dough in bread machine. Roll out and bake base for 3 mins. Smear Passatta on it,some sliced red onion, red pepper, salami, mozzarella (dried with kitchen roll). Bake another 7/8 mins: fab!

I use the HFW recipe linked above in the bread maker on dough setting. Tin of passata for topping, or one of the jars of pizza topping you can get in the supermarket. I find one of either easily does five pizzas. I don’t know that I think it’s a lot cheaper than buying them though.

I like to make a raw tomato sauce because it saves time. Inspired by Chris Bianco from the “best pizza” documentary on Netflix (I only watched a bit of it, too much biography not enough pizza). https://www.today.com/today/amp/recipes/tdrp119725 Although I add a bit of garlic.

I let crushed tomatoes from tins drain a bit and then add the rest and squash about a bit. If it’s too firm I can add some juice back.

I buy large naan breads from Aldi (from the bread section - not the 'Indian' section) for the base.

Sauce - put tin tomatoes, glue x-virgin olive oil, splash red wine vinegar, garlic powder, dried oregano, salt and pepper. Whizz til smooth.

Really thin spread of sauce (recipe above makes enough for about 5 bases and keeps well covered in fridge) or the base goes soggy. Toppings of choice (I like a mix of grated Mozarella and finely grated navalmoral, also from Aldi)

Cook at 230 for about 7-10 mins. Yum

Tomato sauce - tin of plum tomatoes, water (rinse out tin of tomatoes), garlic, tomato purée, oregano, fennel seeds, balsamic vinegar and because I have it from a holiday I've recently been on - truffle oil. Simmer until thick and darkened.
