Freezing coconut milk

Has anyone done this and if so how did it turn out?

I get fed up of certain things only being available in big tins and this is one of them. I did read that you can freeze it, although not in the tin obviously I want to divide it up into small portions that I would use.

But it did mention that the texture changes and I dont know what is meant by this.

I've done it, it was fine. I buy small tins in B&M. They used to be 3 for a £1. Not sure if they still are though, I haven't bought coconut milk for a while.

The only issue I've had is that full fat coconut milk separates - a lovely big layer of fat and the watery stuff below. So you have to really mix it well before freezing. More often than not, I'm using it for thai curries - so I usually make up the base sauce (curry paste, fish sauce, lemongrass, coconut milk, etc) then freeze that.

Yes I wondered about that as it all comes out in one big thick lump with the water underneath

I only need a few tablespoons at a time at the moment for things so I will mix it up and then just spoon it into little pots

I use the creamed coconut blocks, always turns out well and you just use what you need.

I've frozen it before and, although it separates, it does mix back together.

Yes I thought about the creamed coconut blocks but if Im honest I dont really know how to judge how much you need but also I have to track calories and protein really carefully and I wasnt sure how you determine the final amount if you use it, its more concentrated I thought?

I use the blocks as well, they keep for ages in the 'fridge after opening
I just guess the amount if I'm using a recipe that stipulates milk, & if you need to know the NVs I'm sure they're on myfitnesspal.

I put tablespoons in to ice cube trays. The curry recipes I use ask for it in those measurements so it's easy to just chuck the required amount in. I don't bother to defrost them either. I haven't had any issues.

Yes you can freeze coconut milk successfully. Also did you know that light coconut milk is just half a can of coconut milk with half a can of water added ? Save yourself money and buy the full fat version and dilute it yourself. The unused portion can then be frozen.

I used to get these but can't see them any more. They were so useful for adding to soups or to a curry when you didn't want a strong coconut flavour!

I freeze coconut milk in portions for a particular soup recipe I make frequently. When it defrosts it separates into a solid lump and a watery layer but it mixes back together again fine. I haven't noticed a change in texture.
