Easy curry recipe

Could anyone recommend an easy curry recipe?
I've failed at recipes I have tried before, every one has turnes out awful.

BBC Good Food website has an easy curry which really is easy and tastes delicious. Google it and give it a go.

This is one I've recommended before and cooked every other week for my lunches. It's delicious! I cook with oil and also add a squeeze of honey in at the end, which lifts the dish quite nicely.

Caramelise one onion, 2 crushed cloves of garlic, a green chilly cut in half and a small piece of finely chopped ginger for a few minutes. Add a teaspoon of cumin and fennel seeds after a few minutes.

when browned, add whichever meat of your choice (chicken/lamb/beef.. with bones is better as it adds to flavour).

add salt and chilli/curry powder to your taste.
Cover and let simmer on low heat for 20-30mins.
can add a bit of water or stock to stop pan sticking at bottom but as meat cooks, it will release water also.

at the end can add a splash of coconut milk and once heat is turned off, a squeeze of lemon juice to enhance flavour.

(this is what I do anyway and I use a Sri Lankan curry powder but can use any store bought mix. Good luck!!)

Leave to marinate overnight if possible before cooking.

I second this. In general for Indian food I like Meera Sodha, Chetna Makan, and Monica (the spice club) as I find they have consistently good recipes.

Heat oil in saucepan, add a chopped onion and fry for 5 mins or so. Add chopped chicken breast and brown on all sides, add in a tbsp of curry powder, tbsp ground cumin, tsp of ground coriander and tsp of turmeric. Fry until the spices smell good, add some crushed garlic and veg of choice, I like peppers and mushrooms, and coat them in the spice mixture then add some boiling water, a chicken stock cube and some red split lentils (maybe a cup??). Cover and cook on low for 30 mins, stirring occasionally until thick.

Can add plain yoghurt to serve if you want…

I can recommend the book Zahda Saeed's Indian Barbecue. I went to the courses she gave at her house when she lived in Wilmslow. The only difference is that her original spice mix didn't have bay leaves, but the one in the book does.
Interestingly for me, when you mix all the spices together - garam masala, chilli, cardomem, turmeric it smells just like the curry powder we used at home in the early 60s, think it was Veerswamy's or something like that. Little tins, one pink, one blue.
If you want a madras curry, make one to the strength you like, then add the juice of half a lemon.
