One of my dc is gluten and dairy free. We are also pescatarian. I don't like using highly processed food replacements like fake bacon. I've started to build a compendium of meals, such as stuffed peppers, stir fry veg, kedgeree, omelettes, veggie chilli, chickpea curry, cauliflower biryani, poke bowls, pulled jackfruit etc. Please share your ideas with me!

I’m looking forward to doing my food shop today! We don’t use couscous, but we can use quinoa. Have never tried chickpea flour. Have had a bit of luck with rye flour for scones and almond flour for pastry, but haven’t really found a good combination for pie crust. Would love to do a nice layered pie. I used to do one with butternut squash, roasted peppers, chestnutty stuffing and pears and cranberry sauce, but can’t figure out a gf pastry now.

Ready made Jus-Rol gluten free puff pastry is also dairy free. I know it's not the same as making it from scratch but it handles so much better than any I've ever made

Chickpea flour pancakes are great, if you’re getting some chickpea flour. I’ve never tried baking with it though. I use this recipe, and it’s delicious with my favourite coriander chutney if you want to avoid dairy free yogurt.

I find the Becky excell gluten free books are fab and can be made dairy free too for most recipes. I'm sure she has a pie recipe in there. shared alot on Instagram and has a group on Facebook where you can ask for advice too

Rukmini Iyer's "Green Roasting Tin" book is full of the most delicious stuff - and it's simple prep: most are chop/drain and toss/pour in the oven tray and roast, then maybe make a sauce to go with it. She has several, all good, Green is the "entirely veggie and vegan" one.

I'd second the green roasting tin. The Bosh books are good too. I go to my local library and borrow their veggie and vegan cook books and work out which books we would actually use.

This thread is great we are a house full of different requirements one vegetarian almost vegan because of allergies (me) one sulphite allergy (dd2) and one with sensory issues (dd1). We end up making at least two if not three meals most nights or if I'm not well enough I eat toast and feed them. I'm fed up with the same things and have so much else on just now I can't get motivated to research new things.

Wonderful ideas already; thank you so much! We have found that indeed Mexican and Indian type recipes lend themselves well to our requirements. Pack lunches are really difficult. I routinely do a 4 hour drive to drop a dc off somewhere and feel lost for what would be suitable car food that isn't really processed. Last time, we stopped and tried to find food. I really don't want to mess around eating salad or rice in the car!

For lunches, you could use corn tortillas for wraps. Ocado sell some really good ones but they are on the pricey side.

@FurAndFeathers good point, we must have replaced it with something cous cous -esque. I wing it with whatever is in the cupboard but basically something grainy, mixed veg, a protein, and a glug of flavoured vinegar and olive oil. Toasted nuts on top if you're feeling fancy.

I made a great soup today:

3 onions, chopped
Same volume chopped green cabbage
A big carrot, chopped
3 cloves garlic

Fry all veg together in veg oil for ten mins. Add a teaspoon of curry powder, pinch turmeric and 2 bay leaves. Lightly mix in. After one minute, add in a large handful red lentils, then add a tin of coconut milk then about a pint of water, and two veg stock cubes. Cook till veg is soft. Remove bay leaves, blend. Can add more spices if needed.

I just made a delicious risotto with a load of leftover veg from my fridge, some miso ginger broth and I added nut milk and mashed avocado at the end for some creaminess. It holds really well if you want to eat it later

OP, would Onigiri (Japanese rice balls/triangles) work as a car snack? Switch soy for tamari and skip the seaweed sheet. They're very much on the go food in Japan and you can fill them with almost any protein.
