I'd do something that could be made ahead of time, then just served out, perhaps caramelised orange slices or orange slices soaked in liqueur syrup served with a slice of polenta cake, or a lemon syllabub served with almond Easter biscuits.

The fam all like steamed syrup pudding and I might have rhubarb, plums or something else to go with it. Custard and icecream.

If it's chilly...
Hot cross buns substituted for the bread in Bread and Butter Pudding, with cream and peaches.
Chocolate pizza served with icecream.
Apple Rhubarb Crumble

Pavlova baked with brown sugar with slithered almonds mixed in and decorated with cream, half peaches, peaches poached in cinnamon, vanilla and Grand Marnier syrup, and toffee chards with pistachios.

I'm a Tiramisu person. Easy to make, no cooking or faffing involved, and is better next day as it kind of "sets" in the fridge. A crowd pleaser every time.
