Hi,

Does anyone have any easy recipes for things i could batch cook (would need to be suitable for toddlers too)? I do all the normal pasta bakes, biryani, chillis and bolognese but was looking for something different but easy. I've had a look online and not too keen on the things i've seen as they seem really long winded.

@AtleastitsnotMonday I am also curious about falafel. I tried making them once, with chickpeas, and they were really dry. What mix of chickpeas to sweet potato do you use? That BBC recipe seems to just be sweet potato??

To be honest I'm not one to weigh or measure but I'd guess about 50:50, I sometimes add a dollop of mango chutney to the mix too, give a nice sweetness and helps to bind. If you find them dry, serve in pita with lettuce, cucumber, mint and yoghurt dressing.

Freezing mashed potato - apparently You can freeze mashed potatoes for up to one month. There's a good amount of liquid in the potatoes that could form ice crystals and cause freezer burn if they're frozen for longer periods of time.

I once used an American recipe for preparing ahead and cream cheese was used in mashing before freezing .It was the best tasting reheated mash I've ever had .The extra fat helps when freezing and reheating ?
