Does anyone else with fussy DCs look at recipes and get depressed?

This may be an "us" problem but we have one fairly fussy eater (DS has some sensory issues, he has SEN) and our daughter has an unusual heritage for the UK (both our DCs are adopted from overseas but they have different ethnicities).
I am looking at Spring recipes from her ethnic background and just going "no, no, no, no, he won't try that, no point in even trying that one either".
I may just give up on DS eating any of a meal (I don't cook two meals but if he doesn't want it he is welcome to have a bowl of cereal later on).
They all look so delicious too.. and I think DD would like to try them, and I love to cook new things.

Yes this is me too. DS1 and DS2 have dislikes, DH has allergies. I cook for DC during the week and sometimes eat with them. DH cooks for everyone at weekends but often 3 versions.

Eg today we had meatballs in tomato sauce for 2 of us, meatballs in gravy for one and mushroom pasta sauce for another (from freezer as previously cooked for such an occasion).

I was vegetarian when I met DH but gave up as it was too difficult with his allergies (plus some fussiness). I try and at least make interesting lunches for myself!

I have also started making my own lunches more interesting (e.g. I have been making varied types of quesadillas and freezing them).
For Easter dinner we had roast lamb (DS tried a bit) and I had slow cooked it with spices and I asked the DCs to choose either a traditional accompaniment from DD's ethnicity or roast potatoes (which I had frozen and the oven was on anyway). The vegetables I extracted one before fully preparing them which DS likes so he had roasties, veg, gravy and a taste of lamb, and the rest of us had a spiced slow cooked lamb with traditional (non UK) accompaniments.
I mind much less taking a bit of a dish out and putting it to one side for DS, than cooking a whole extra dish. But e.g. if we are having a fish in sauce poached in foil, then I can also ask the DCs if they want that or just a fish fillet from the freezer and they can all go in the oven at the same time.
Tonight we made spaghetti bolognese and DS who usually likes it thought the sauce looked different so got himself a bowl of extra pasta but then decided he did like it. My DM is with us and unfortunately took against him rejecting the first bowl and tried to get rid of it but we told her not to - it's not just him actually not liking things that's a problem, it's him SAYING he doesn't like them when in fact he does.
