Using up desiccated coconut (which I want to cream) and self raising flour

I dont like desiccated coconut, I dont know why Ive got a couple of bags of it in the cupboard. I also have self raising flour

I dont want to chuck them but would prefer to use them for something to cook for others (I cant eat them at the moment)

My plan was to 'melt' down the coconut so that its a cream rather than desiccated but to do what with it? I need a recipe that uses the flour and the coconut in one easy go that others would like. I have sugar, vanilla perhaps, or other spices.

Any ideas?

Dessicated coconut certainly doesn't 'melt'. Why not just make a jam and coconut sponge cake for the others? That should use up some self raising flour as well

Oh doesnt it? I thought I read that if you boil it in some water and then blitz it you end up with coconut cream

I suppose because the desiccated coconut is not that 'recent' in my cupboard so am anticipating it will be a horrible texture.

Perhaps I could use the coconut in a curry and just use the flour with something.

Mmm I agree, desiccated coconut is grated dried coconut flesh so it won't melt. We had some cherry and coconut scones recently, with a drizzle of chocolate over the top. They were lovely, and thinking about it, were probably more like rock cakes despite being called scones. Could you make something like that?

Are you sure you don’t like coconut? Excuse the idiotic question. I would say I don’t like coconut, don’t like bounty bars, or it sprinkled on cake, but I do like Nice biscuits and they’re coconut. So you might be ok with coconut in things. Having said that, you might then have made a load of biscuits that you don’t like. Maybe just put it out for the birds.

I got the coconut you can grate and it turns into cream- it was the most delicious smelling thing ever. I don't know how you'd turn dedicated coconut into that though. I use it in curries.

I also have too much desiccated coconut at home. The only thing I use it for is a Swedish cake called Snoddas. A fan favourite here! Quite retro, pale chocolate. Modern versions are heavier, more chocolatey, but I like this old style one (you can eat more). If you want recipe I’ll translate and post! You’ll have to bake a lot of cake to go through all the coconut though ;)

I have used successfully used dessicsted coconut in curries when I realised we were out of coconut cream.

a family favourite for me is a carrot and coconut cake with a neon drizzle icing - this looks about right.

I also love desiccated coconut in tiffin.

This is a good recipe for using up dessicated coconut
Coconut brownies
no one in my house likes dessicated coconut apart from me, but they all eat these! They don't taste at all coconutty.
Technically I suppose if you boil it to rehydrate it and then blend it you would get something like coconut milk because it's just blended coconut flesh.

Dh made coconut flapjacks. No idea about the recipe - I don't think it was a 'coconut flapjack' recipe - but he just found a good flapjack one and added coconut. It was delicious.

These sound nice, I think what it is although I like coconut I cant stand the texture of dessicated. I must have bought it ages ago for some recipe, needed barely any of it and there it is now in a lump in the cupboard. Im going to be cooking thse things for others as I cant eat them so I dont want people having an unpleasant texture

Yes I do like coconut, I just dont like the texture of desiccated and thought that you could blitz it up to make it smooth/creamy, dont know where I got that idea from.

@Asiama here it is, and a photo of what it’s supposed to look like too from my VERY worn book ;)

Oven 175 degrees C

Grease and flour a pan 30x40 cm (but IMO that’s a bit large. My oven baking tray is that big and I use the recipe x 1,5)

150 g butter/margarine
2 eggs
300 ml sugar
2 tsp vanilla sugar (Swedish thing, but essence works of course but I don’t know how much is good)
1 tbsp sifted cocoa powder
450 ml plain flour
2 tsp baking powder
150 ml milk

Melt butter, let cool. Beat eggs and sugar until pale and fluffy. Add the dry ingredients in turns with the butter and milk. Pour batter into prepared pan, bake low in the oven for 15 minutes (test that it’s done). Let the cake cool in the pan. Meanwhile make icing.

75 g butter/margarine
1-2 tbsp cold coffee
1 tbsp sifted cocoa powder
2 tsp vanilla sugar (see above)
350 ml icing sugar

Melt butter, stir in other ingredients until smooth, spread over cool cake, sprinkle with coconut.
