Inspiration needed! Multiple entertaining upcoming & out of ideas

I’ve lost my recipe mojo. Am looking for ideas for the following:

  • 6 friends round for Sunday lunch. Ideally make ahead main and pud so I can socialise.
  • 12 for Good Friday. Mixture of ages - primary school and late teens plus adults one of which vegetarian & gluten free
  • 6 for Easter Sunday and Easter Monday.

Apart from one on Good Friday no dietary restrictions - but I won’t cook or eat lamb. I have just inherited a fish kettle so will probably do a whole salmon as part of a larger buffet on Good Friday.

Any ideas welcomed! Any recipe links also really appreciated.

Sometimes for Sunday lunch I do this kind of thing - can cook day before

then add thin slices of potato on top for the last hour and so everything’s in one
pot.

The Good Friday one I would do a load of jacket potatoes, sausages (inc gf / veggie), salad and fruit crumbles for pudding which can be made the day before. Can save some stewed fruit for the gf guest

chilli is also a good thing to cook the day before

jamie Oliver does a puff pastry chicken thing which is nice on his one pot recipes on website

In my experience guests always appreciate being catered for at someone’s house so
dont put too much pressure on yourself!

For Sunday lunch: spring chicken pie and rhubarb crumble
For Good Friday: salmon, pesto rice salad, chicken skewers, lemon and mint new potato salad, grilled feta
For Easter Sunday: spring chicken casserole and Easter egg cheesecake.

I guess it depends a bit on whether you want to go down the traditional Sunday roast line or 'springy/Easter type meals. If you're happy to steer away from those then this Fish Tagine is really good. I'm actually doing it on good Friday as we do like to have fish then (well a actually we eat fish all the time), I'll do it with a 'jewelled' (pomegranate) cous cous with lots of fresh herbs, roasted veg and possibly some flat breads if I have time. It looks really pretty if you are entertaining.

For your buffet I'd probably try and make as much of the food gluten free as possible. Along with the Salmon I'd serve lemon, garlic and herb chicken skewers and sweet chilli haloumi skewers , a puff pastry tart made with Just Roll Gluten Free Puff and topped with either roasted veg and mozzarella or Stilton and caramelised leeks. Then a big bowl of herby, buttered new potatoes, a green salad, tomato,mozzarella and basil salad, and homemade apple slaw.

Thank you so much. I’m always in a bit of a quandary re the gluten free person when there is a big group and wonder if it is fair on everyone else to GF all the food.
