Hi there,

We seem to amassed a huge glut of vegetables over the last week or so which need cooking/eating today - do you have any suggestions for a meal containing lots of veg, please? Or even and main and some sides?

I have broccoli, cauliflower, leeks, spring greens, green beans, runner beans, Brussels sprouts, corn on the cob, mange tout, a few baby potatoes and some baking potatoes.

They were meant to be consumed throughout the weekend/week but it's just not worked out that way this week, unfortunately.

I don't have any meat in the freezer so it's going to be a veggie day, which isn't a bad thing.

I also have rice and pasta in the cupboards.

I'm currently thinking of a vegetable and chickpea curry but would love some other inspiration if anyone can provide any, please?

As a general rule I find vegetable tossed in oil, salt, and pepper then roasted much more delicious to eat than steamed or boiled - especially broccoli, cauliflower, and sprouts/cabbage.

Meera Sodha does magic things with vegetables, I love her recipes, so would recommend looking at her guardian column for inspiration. This sprout nasi goreng is super tasty. If you have East the following recipes are great and I think you would be able to switch the vegetables for what you have in - Roast Green Beans & Tenderstem with Sesame Sauce, Tandoori Broccoli, and Roasted Carrot and Cabbage with Gochujang.

@SummaLuvin yes, I agree with you with regard to roasting the veg - was thinking about doing that with them first before sticking them in the curry.

I’d put the spring greens and baby potatoes in this pie and freeze it.

I’d use the leeks and sprouts in this pasta dish.

I coat cauliflower in breadcrumbs or batter and pop in the air fryer

I love roasted veg!or soup is good and you could freeze it for easy lunches next week

Potato dauphinose (cant spell that)

Broccoli, green bean, greens with sticky asian flavours like soy, honey, wine vinegars, sesame oil and seeds etc

Minestrone!
I usually put onion, carrot, celery, broccoli, cauliflower, peas, corn, green beans, can of some kind of beans, tin tomatoes, stock cube, in mine, but it's endlessly changeable. I've pretty much used anything in it, leek is fantastic.

Add any kind of pasta to thicken, serve with pesto

Out of interest, why do you have to eat them all today? Are they all looking a little dodgy? We eat a lot of veg but would struggle to cook and eat all that in one day but could easily do it over two or three.

Air fryer all of it. Garlic salt, chilli flakes, fry light.

Since I got an air fryer I eat so so much veg.

Does anyone know of a book or list that gives timings and temperatures for doing stuff in an air fryer. The downloaded one for the air fryer we bought is crap and only gives about half a dozen timings...

I just make it up and keep peeking in the drawer. I have noticed a few freezer bits I've bought lately have air fryer timings on. Another thing I read said knock 20 degrees off the heat and 20% off the time that you would do in a standard oven

Not sure about the 20% off the time. I did some frozen chicken wings last night, instructions were 35 minutes in the oven, but they were perfect after just 12 minutes in the air fryer. I think it'll just have to be trial and error, and making notes as I go along, creating my own timing sheet.
