Simple banana bread recipe needed

Hi everyone,

modes anyone have a no sugar recipe for banana bread suitable for 10 month old?

I have bananas, eggs, plain flour and cinnamon - can I make banana bread for a baby with this? All the blogs have buckwheat this or flax seed that - no time for that!

Google vegan banana bread… You’ll need a raising agent - eg 1 teaspoon of bicarbonate of soda. I use a little bit of agave nectar or coconut sugar for some sweetness . Oh and coconut oil.

I have also made apple and banana baby breakfast muffins, they were quite good. I think they had oats on top.

I’ve got a chocolate banana bread, but it uses self raising flour. If you only have plain then a teaspoon of baking powder (you would have too Google how much needed per 100g or something) would be needed to make it rise.

25g butter melted
1 egg
300g banana mashed (weight after peeling)
Splash of milk
125g self raising flour
4g bicarbonate of soda
50g cacao / cocoa powder
25 g chocolate chips (optional)
vanilla essence

Line square cake tin. Heat fan oven to 160 degrees.
melt butter
peel and weigh 300g ripe banana then mash
add egg to banana and whisk together with a fork, add butter, vanilla & splash of milk & mix together.

add dry ingredients and mix well, adding another splash of milk if needed. Add half the choc chips and stir then pour into lined tin. Scatter the remaining choc chips on the top then bake in the middle of the oven for 20 mins. Once cooked, lift out of the tin using the edges of the baking paper and place on a rack to cool. Put in fridge for 10 mins once cooled if the chocolate hasn’t set.

I accidentally made it without the butter one time because it was still in the microwave and it worked fine, so it could be fat free as well. I’ve no idea why the bicarb is in there when it’s SR flour, I don’t think I’ve tried it without so not sure how it would affect the recipe.

For things like this I always go to Felicity Cloake in the Guardian - she analyses lots of different recipes then combines the best of each.

Jamie Oliver's buddy's banana bread, (calls for two spoons of honey, I use one or none at all, also calls for a dash of apple juice, I just use water.)
I don't use the optional pecans, but sometimes use sultanas (DS is older now), fresh blueberries work well too a handful or two stirred in before putting in the tin.

I like this one! More of a cake than heavy bread.
TBH, I wouldn't be too worried about sugar in a bit of banana bread, the amount he'll eat at 10 months, it would be fine. You could probably cut the amount of sugar down a bit, if you want.

125 g unsalted butter , plus extra for greasing (at room temperature)
2 large eggs
4 ripe bananas
2 tablespoons runny honey (optional)
2 tablespoons water
250 g self-raising flour , plus extra for dusting
1 big pinch of ground cinnamon
50 g blueberries/sultanas

Beat the butter until really soft (baking spread works fine), crack in the eggs, beat again. Mash in the bananas. It looks gross at this point, stick with it. Stir in honey if using (not necessary) and water. Mix dry ingredients together and fold into the wet , add fruit/nuts. Put into a greased, lined loaf tin, bake for 40-50 minutes on 180.

I adore Dan Lepards butterscotch banana cake it is just divine, a little more involved but simple in ingredients (I use normal plain flour and it works just fine). But for something more simple and straightforward I would look at Felicity Cloakes How to cook the perfect banana bread
